A cup of oatmeal that has been dressed up and tastes more like an oatmeal cookie! To make mine quickly and simply, I use the microwave.

Ingredients
- 1 egg
- 1 cup milk
- 3 tablespoons milk
- ⅔ cup quick-cooking oats
- 2 tablespoons raisins, or to taste (Optional)
- 1 tablespoon brown sugar
- 1 teaspoon vanilla extract
- 1 teaspoon butter, or to taste
- ¼ teaspoon ground cinnamon
- salt to taste
Instructions
- Beat egg in a microwave-safe bowl; add 1 cup plus 3 tablespoons milk, oats, raisins, brown sugar, vanilla extract, butter, cinnamon, and salt and mix well.
- Microwave on high for 1 minute; stir and microwave for 1 minute more. Stir oatmeal and microwave until cooked, about 1 minute more.
- I was tired of plain, boring oatmeal, so one morning I added some oatmeal cookie ingredients and it was a hit! I tend to leave out the sugar and salt for my small kids and then add a bit of the contraband for myself after serving them. Add more or less butter, sugar, etc. to your own taste.

Historically, I don’t eat oatmeal due to texture but the flavor of this is great. I used craisins and a tblsp of chopped pecans to add some crunch. Good!
It was just okay. I blended some old fashion oats down a bit and cooked it on the stove, and the consistency, while thin at first, thickened up quite nicely. However, it didn’t particularly taste like an oatmeal cookie and needed some extra sugar. It was pretty bland overall. I did add some extra cinnamon, but it really needed some extra flavor and texture – maybe some nuts and fresh fruit.
really good recipe. I made it the way it says except raisins because my daughter doesn’t like them. she loved it!. Then I switched up the milk for almond milk, coconut oil for the butter, and added a tsp of wheat germ and a tsp of flax seed, and a sprinkle of nutmeg… it turned out just even better and its good the way it is written.
This was easy and delicious. Will definitely be making this sgain. No changes necessary.

Much lighter than traditional oatmeal by adding the egg.
Not tasty really, I added peanut butter amd grape jelly but that didn’t help.

Yummy! I threw everything in a saucepan and made it over the stove. The consistency was great and was done in 10 minutes. Didn’t have raisins on hand so I used cranberries instead. Delicious warm flavor for this cold morning 🙂
I liked the concept of this. It sounded so good. I realized I actually purchased steel cut quick oats. According the package. They just required a little extra time, in the microwave, over the Quaker quick oats. I didn’t care for the chewier texture, but that is not the recipes fault. My issue is it didn’t taste like an oatmeal cookie at all, and it wasn’t quite sweet enough. I also had odd egg white bits in the oatmeal despite blending in the milk very well. I have never had a microwave oatmeal recipe call for an egg. I made Becky’s baked oatmeal recently, from this site, and it may have raised the bar on hot oatmeal. That recipe also made storing leftovers with ease. Something important to me for quick and handy breakfast ideas during the week. Also, note, this recipe makes at least 2 good sized servings.
Yummy and so easy to make for a quick and hearty breakfast! Definitely add the optional raisins and for a little crunch I added some chopped walnuts. I topped it off with a dollop of greek vanilla yogurt and a sprinkle of cinnamon and nutmeg. Thanks for a great recipe!
Really easy to make and packs a lot of flavor. Definitely will make again. This took 5 minutes in my 1000 watt microwave. Not quite the texture of an oatmeal cookie but the flavor is there.
