Making caramel shortbread, often known as millionaire’s shortbread, is simple with this recipe. These squares are so delicious you’ll want to cut them into small pieces. They have a buttery shortbread base, a solid caramel core, and a luscious milk chocolate covering.

Ingredients

  1. 1 ½ cups all-purpose flour
  2. 1 teaspoon baking powder
  3. ½ teaspoon baking soda
  4. ¼ teaspoon salt
  5. 1 ½ cups coconut milk
  6. 2 eggs
  7. 1 tablespoon vegetable oil
  8. ½ cup crushed pineapple
  9. 1 medium banana, chopped
  10. ½ cup brown sugar
  11. ¼ cup butter
  12. 1 (8 ounce) can pineapple tidbits in juice, drained and juice reserved

Instructions

  1. Mix flour, baking powder, baking soda, and salt together in a bowl. Add coconut milk, eggs, and oil; stir to combine. Stir in pineapple and banana until just combined; do not overmix.
  2. Melt brown sugar and butter together in a saucepan over medium heat. Add pineapple tidbits and 1 tablespoon reserved pineapple juice. Bring to a boil. Reduce heat and simmer until slightly thickened, 3 to 5 minutes.
  3. Preheat a griddle to 325 degrees F (165 degrees C). Pour 1/4-cup scoops of batter onto the hot griddle. Cook until bubbles form, about 3 minutes. Flip and cook until set, about 5 minutes more.
  4. Serve pancakes with the pineapple topping.

The pancakes were easy to make and tasty, an added bonus is that they are dairy free which makes my older son happy. I did not make the topping as my youngest son wanted maple syrup. I think the topping would have been a delicious addition though. I added cinnamon and vanilla to the batter. I would have liked a stronger coconut flavour, maybe a drop of coconut extract would be good. #AllrecipesAllstarsCanada #InternationalFavourites #FacelessNoMore
