Homemade pea soup may be created in less than 30 minutes with the help of canned sweet peas, frozen spinach, and chicken broth. It is also kept simple by blending early in the cooking process so the soup purees all at once in a single batch.

Ingredients
- 2 tablespoons butter or vegetable oil
- 1 cup chopped onion
- 2 (15 ounce) cans Del Monte® Sweet Peas, drained
- 2 cups baby spinach
- 4 teaspoons fresh lemon juice
- 4 teaspoons fresh thyme
- 3 ½ cups chicken broth, divided
- ¼ cup heavy cream, sour cream, or plain Greek yogurt (Optional)
- 1 tablespoon Garlic croutons
Instructions
- Melt butter in a medium saucepan over medium-low heat. Cook onion about 10 minutes or until lightly browned and soft, stirring frequently.
- Blend onion, peas, spinach, lemon juice, thyme and 2 cups chicken broth in a blender or food processor until very smooth. Return to same saucepan. Stir in remaining broth. Gently heat about 5 minutes, stirring occasionally.
- Stir in cream, if desired. Heat over low heat about 1 minute. DO NOT BOIL. Garnish with garlic croutons, if desired.
- For Minted Sweet Pea Soup, use 1/2 cup fresh mint leaves instead of thyme in Step 2.
- For Tuscan Pea Soup, add 1/2 cup fresh basil instead of thyme in Step 2. Garnish with Parmesan cheese with garlic croutons in Step 3.

It is a good way to ruin a can of peas! Maybe without the spinach, even though I used half the amount, it might be good. I will not make it again. I usually love allrecipes.

Yes I made it was very delicious and easy believe me when I say easy because I hate , hate cooking or repairing anything to eat. This will be my go soup, fast food, and even a snack…….yes love it.
This is simply amazing. Accidentally I halved the amount of spinach (used frozen) but I still found this very tasty, and will probably continue to make it as such. Also used 4 Tbsp lemon juice.I never added the last 1 and 1/2 cups chicken broth, leaving it thicker and it was delicious. I divided some of the soup and did add some cut-up ham which I served at dinner, but will plan on leaving the remainder meatless for a nice light lunch. A little bit of sour cream was lovely but not necessary I can’t rave enough about this recipe. It reminds me of a pea soup I had years ago served in a fine restaurant . Perfect for the summer and tastes garden-fresh. Thank you so much!
