Instant Pot® Brunswick Stew

The fruit is brilliant and fresh, covered in a crackly, sweet shell. It makes for a delightful snack and is enjoyable to bite into. Decide which fruits you prefer! Pick whole fruits if you can. Ingredients

  1. 2 (14.5 ounce) cans whole peeled tomatoes
  2. 2 russet potatoes, peeled and diced, or more to taste
  3. 2 cups chicken broth
  4. 1 cup diced onion
  5. ¼ cup Worcestershire sauce
  6. ¼ cup apple cider vinegar
  7. 3 tablespoons ketchup
  8. ½ teaspoon red pepper flakes, or to taste
  9. 2 (6 ounce) bone-in chicken breast halves
  10. ¼ teaspoon seasoned salt, or to taste
  11. 1 dash ground thyme
  12. ground black pepper to taste
  13. 1 (10 ounce) package frozen corn
  14. 1 (10 ounce) package frozen baby lima beans
  15. 1 (10 ounce) package frozen sliced okra
  16. ¾ cup shredded cooked pork, or to taste

Instructions

  1. Combine tomatoes, potatoes, chicken broth, onion, Worcestershire sauce, vinegar, ketchup, and red pepper flakes in the pot of a multi-functional pressure cooker (such as Instant Pot®). Lay chicken breasts on top; add seasoned salt, thyme, and black pepper. Close and lock the lid. Select high pressure according to manufacturer’s instructions; set timer for 20 minutes. Allow 10 to 15 minutes for pressure to build.
  2. Release pressure carefully using the quick-release method according to manufacturer’s instructions, about 5 minutes. Unlock and remove lid.
  3. Remove chicken from pot and set on a plate to cool. Place corn, lima beans, and okra into the pot and stir to combine.
  4. Remove skin from chicken, shred the meat off the bones, and return to the pot. Add pork. Seal cooker; select low pressure and cook until vegetables are heated through, about 15 minutes. Release pressure carefully using the quick-release method according to manufacturer’s instructions, about 5 minutes. Unlock and remove lid.

I added a little bit of brown sugar and about a table spoon or so of hickory smoked bbq sauce as well as garlic powder and onion power to add a little more flavor. I did this after shredding the chicken and adding it back in along with the cooked pork. It was delicious!

I followed the recipe exactly; I made it on the stove, though. I let it simmer for about 2 hours so that it was thicker than the picture. We like our stews thick. This is a great recipe; it’s like the Brunswick stew in Eastern NC. I’ve saved it and will make again.

The only changes I made was to use the low sodium canned tomatoes and chicken broth. Also, I don’t have an instant pot so I simmered this on the stove for a couple of hours to let the flavors meld. I have tried other Brunswick stew recipes but none have ever hit the mark before this one. It tastes just like the Brunswick stew I grew up with in Georgia, my whole family loved it! We actually gorged ourselves on this tonight it was so, so good. I will be making this regularly, thank you for the recipe!

I didn’t add the pulled pork because I didn’t want to go to the trouble (and couldn’t find it ready-made), but otherwise, I made this as directed. It was my first Instant Pot recipe, and worked well for that, since it was so simple. We found that it didn’t have enough flavor for us, but after I added in more seasonings (mostly a Cajun blend), it was good! It didn’t taste quite like the Brunswick stew that I know, but it was still pretty tasty. I’ll play around with the seasonings more next time, but this recipe has great potential!
