Cinnamon Apple and Banana “Granolameal”

A breakfast with a twist that looks and tastes like traditional handmade oatmeal is created with fresh fruit, granola, and cinnamon. With a steaming hot cup of dark roast coffee, this dish goes well.

Ingredients

  1. 1 apple – peeled, cored, and chopped
  2. 2 bananas, sliced
  3. ½ cup granola
  4. ⅓ cup ground cinnamon, or to taste
  5. 1 teaspoon white sugar (Optional)
  6. 1 teaspoon unsweetened cocoa powder (Optional)
  7. 1 teaspoon butter (Optional)
  8. 1 tablespoon almond milk, or to taste

Instructions

  1. Place apple, bananas, granola, cinnamon, sugar, and cocoa powder in a container with a lid. Cover and shake until combined.
  2. Melt butter in a skillet over medium-high heat. Add apple mixture; increase heat slightly and cook, stirring constantly, until cinnamon starts to darken and turn into a paste, 2 to 3 minutes. Stir in milk.
  3. Reduce heat to medium; cook, covered, until flavors combine, about 1 minute. Uncover and stir. Cover and simmer for 1 minute more. Remove from heat and stir.

This dish is great. I didn’t use the cocoa powder and added some brown sugar and maple syrup at the end. A wonderfully sweet upliftment in the morning.

I had this for lunch today.. I liked it. I shredded the apple and did not use the optional cocoa and butter. I had this with some salty bacon and it was a nice contrast to this sweet dish

This was . . . “interesting”. I scaled this down to 1 serving, and cut the cinnamon back to about 1/2 tablespoon. I did add the optional cocoa powder. I added more milk in order to be able to keep cooking it (otherwise it would have just been a burnt mess). It looks absolutely terrible, but once I tasted it, it wasn’t that bad. Not something I’d make again, but it did fill my stomach and keep me full until lunch.
