Vegan Yogurt Sundae

Completely vegan, somewhat healthier than an ice cream sundae, and simple to prepare with only a microwave, a fork, and a few little glass bowls.

Ingredients

  1. ¼ cup frozen berries
  2. 1 tablespoon white sugar
  3. 2 tablespoons vegan chocolate chips
  4. 1 tablespoon vegan margarine
  5. 3 tablespoons soy milk or soy creamer
  6. 1 (8 ounce) container vanilla soy yogurt
  7. 1 tablespoon chopped nuts

Instructions

  1. Toss berries with sugar in a microwave safe bowl. Cook in the microwave for 40 seconds at full power until thawed.
  2. Place chocolate chips and margarine in a microwave safe bowl. Cook in the microwave at 60% power for 45 seconds until melted. Use a fork to stir until smooth, then stir in soy milk until incorporated; set aside.
  3. Spoon the soy yogurt into a small bowl, then spoon fruit overtop. Pour on chocolate sauce and sprinkle with nuts.

This is similar to another recipe I have – we call it “breakfast sundae” and it is also non-vegan…I use fresh berries and sprinkle unmelted chocolate chips on top – my kids like our original version better and it doesn’t include the extra sugar and butter!!! But, I think occassionally, I will like to have the melted chocolate drizzles on – it makes it seem like a real sundae!!

Delicious! I made this the “non-vegan” version with tradition yoghurt and chocolate and milk and butter but the combination is a winner! Worth a try! 🙂
