Berry Smoothie Bowl

This pecan pie has a unique flavor thanks to the cocoa.

Ingredients

  1. 1 cup frozen strawberries
  2. 1 cup frozen pineapple chunks
  3. 1 cup plain Greek yogurt
  4. ½ cup coconut water
  5. 2 tablespoons frozen acai berry pulp, or as desired
  6. 1 kiwi, peeled and sliced
  7. ½ banana, sliced
  8. ½ cup fresh blueberries
  9. ½ cup fresh raspberries
  10. 2 tablespoons sliced almonds
  11. 2 tablespoons granola
  12. 1 teaspoon chia seeds (Optional)

Instructions

  1. Blend strawberries, pineapple, yogurt, coconut water, and acai pulp in a blender until smooth; pour into a bowl. Top smoothie with kiwi, banana, blueberries, raspberries, almonds, granola, and chia seeds.
  2. Vanilla Greek yogurt can be used in place of plain, if desired.

I used this recipe for the acai base and altered the topping to my taste and what I had on hand. This was my second attempt making a acai bowl and this will now be to go-to recipe! My first attempt went wrong after I put something together based on photos and was way off. This recipe makes a decent amount and is very filling.

I loved this recipe! Instead of coconut water I put in regular water and it was pretty good! Next time, I would also put in ice cubes, as it got a little warm after awhile. Also, I didn’t have kiwi or pineapple, but I put bananas and blueberries and strawberries in for a nice flavor. I am also allergic to nuts, so opted out on those. Will make again! Relaxing and filling!
