When I do make pancakes—which isn’t very often—I like kefir chocolate chip pancakes. I adore regular pancakes, but kefir adds a deeper layer of savoriness to these. I also strongly advise trying with different flavored kefirs, such strawberry or pomegranate, when creating these pancakes. Although I don’t often consider pancakes to be healthy, this recipe only asks for 2 teaspoons of sugar. You can even skip the maple syrup if you add chocolate chips. Enjoy these with some orange juice or coffee.

Ingredients
- 1 ¾ cups all-purpose flour
- 2 teaspoons white sugar
- 1 ½ teaspoons baking powder
- 1 teaspoon baking soda
- ¾ teaspoon salt
- 2 cups kefir
- 2 eggs
- 4 ounces chocolate chips, or more to taste (Optional)
Instructions
- Mix flour, sugar, baking powder, baking soda, and salt together in a large bowl. Add kefir and eggs; stir until batter is moist but still lumpy. Fold in chocolate chips.
- Heat a lightly oiled griddle over medium-high heat. Drop batter by large spoonfuls onto the griddle and cook until bubbles form and the edges are dry, 3 to 4 minutes. Flip and cook until golden on the other side, 2 to 3 minutes. Repeat with remaining batter.

I skipped the chocolate chips but made this otherwise exactly according to the recipe. My picky toddler inhaled three for breakfast. This is going into the regular rotation!
These are absolutely delicious and are the only pancakes we now make at home! They are fluffy but have a nice chewiness to them. We add frozen blueberries into the batter.
I think buttermilk produces a better pancake… these were sour. Chocolate chips probably cover up the sourness, but I left them out in the interest of health.
I also added vanilla, and substituted kefir for 2 cups plain Greek yogurt and 1.5 cups water. Even without the chocolate chips they were great.
These came out great. Made exactly as directed plus added 1/2 tsp vanilla. Used honey kefir.
Amazing fluffy pancakes. My daughter can’t have traditional dairy, but my homemade kefir seems to be okay. This is a great buttermilk pancake alternative that doesn’t contain additional milk or butter. These are lighter and fluffier than the pancakes we used to make with milk. And WAY better than using Almond Milk! Next time I may add a small amount of Vanilla or Almond Extract for a subtle flavor.
