The muffins tasted and looked exactly like the mouthwatering, tart McDonald’s® orange-cranberry muffins! Much better now that my youngest of my four children helped me put this together.

Ingredients
- 1 cup white sugar
- 2 large eggs
- ⅓ cup vegetable oil
- 1 tablespoon vanilla extract
- 1 ½ teaspoons baking soda
- 1 ½ cups all-purpose flour
- ¾ cup fresh cranberries
- ½ cup pulp-free orange juice
- 1 ½ tablespoons grated orange zest
Instructions
- Preheat the oven to 375 degrees F (190 degrees C). Line 6 large muffin cups with paper liners.
- Beat sugar and eggs together with a fork or electric mixer until blended. Mix in vegetable oil. Stir in vanilla extract and baking soda. Add flour, cranberries, orange juice, and orange zest and mix up nicely.
- Spoon batter into the prepared muffin cups, filling each to the top.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, 20 to 25 minutes.

I like to make things as written in a recipe, on the first go. But I didn’t have any oranges for the zest. So I used 1 teaspoon of orange oil. But that being said. I really liked it, I will make it again and added it to my list of cranberry goodies. It is tangy, but I like that much more than overly sweet. Thanks for sharing.
