This has been a yearly holiday tradition in my house. I also prepare a batch of this to include in the care package I send to my brother while he is serving in the military. You should know that it is really hot and that you will keep wanting more!

Ingredients

  1. 2 heads romaine lettuce, chopped
  2. 4 medium tomatoes (such as Campari®), cut into wedges
  3. 2 medium avocados – peeled, pitted, and cubed
  4. 1 medium red onion, halved and thinly sliced
  5. ½ (15.5 ounce) can black beans, rinsed and drained
  6. ¼ cup fresh lime juice
  7. 1 teaspoon honey
  8. 1 clove garlic, minced
  9. ½ teaspoon ground cumin
  10. ¼ teaspoon salt
  11. freshly ground black pepper to taste
  12. ½ cup extra-virgin olive oil

Instructions

  1. Combine romaine, tomatoes, avocados, onion, and black beans in a large bowl; toss to combine.
  2. Whisk lime juice, honey, garlic, cumin, salt, and pepper together in a small bowl. While constantly whisking, stream in the olive oil until dressing is well combined.
  3. Drizzle some of the dressing over the salad, toss, taste, and add more dressing if desired. If there’s any extra dressing, refrigerate for later use.
  4. Feel free to substitute iceberg lettuce for the romaine, as it’s often used in traditional Cuban salads.
