Vegetarian Chili with Black Beans

Delicious vegetarian bean chili that is quick and simple. Add fresh cilantro, green onions, sour cream, and shredded Monterey Jack cheese as garnishes. Serve with rice or cornbread.

Ingredients

  1. 3 (15 ounce) cans black beans
  2. ¼ cup olive oil
  3. 2 cups chopped onions
  4. 2 medium red bell peppers, coarsely chopped
  5. 6 cloves garlic, chopped
  6. 2 tablespoons chili powder
  7. 2 teaspoons dried oregano
  8. 1 ½ teaspoons ground cumin
  9. ½ teaspoon ground cayenne pepper
  10. 1 (16 ounce) can tomato sauce
  11. salt and ground black pepper to taste

Instructions

  1. Drain black beans, reserving 1/2 cup liquid. Set aside.
  2. Heat oil in a large, heavy pot over medium-high heat. Add onions, bell peppers, and garlic; saute until onions are soft and translucent, about 10 minutes. Add chili powder, oregano, cumin, and cayenne pepper; cook and stir until fragrant, about 2 minutes.
  3. Add reserved black beans, 1/2 cup bean liquid, and tomato sauce. Bring to a boil, stirring occasionally. Reduce heat to medium-low. Simmer, stirring occasionally, until flavors blend and chili thickens, about 15 minutes.
  4. Season to taste with salt and pepper. Ladle chili into bowls to serve.
  5. For a chunkier dish, use crushed tomatoes instead of tomato sauce.

Made as-written. I think will take one reviewer’s suggestion and mix the beans next time but this is stellar, vegan-friendly, and passed the “toddler test” for heat….though I did use a milder chili powder than I would have otherwise.

Giving this 3 stars because it is tasty for what it is. Vegetable soup. This IS NOT Chili. chili – (noun) A stew made of meat and usually tomatoes, spiced with chili peppers or chili powder. Chili made of meat. Technically it does not even have beans in it. There is no such thing as vegetarian chili.
