Ingredients

  1. ¼ cup walnut pieces
  2. ¼ (16 ounce) package hulled and sliced strawberries
  3. 1 teaspoon coconut sugar
  4. 2 tablespoons nonfat Greek yogurt
  5. 1 teaspoon fresh lime juice
  6. ½ teaspoon honey
  7. 1 sheet lavash bread
  8. ¾ cup fresh spinach
  9. 2 slices turkey bacon, cooked and crumbled
  10. 2 teaspoons chia seeds

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Spread walnuts on a baking sheet and toast until fragrant, tossing a couple of times to ensure even browning, 5 to 8 minutes.
  2. Combine strawberry slices and coconut sugar in a small bowl. Let stand for 5 minutes, stirring occasionally.
  3. Mix together yogurt, lime juice, and honey to make the dressing.
  4. Spread the dressing over the lavash bread. Top with spinach, strawberries, bacon, walnuts, and chia seeds. Roll up the wrap and cut in half.
  5. You can also use one large multi-grain wrap instead of lavash flatbread.

I made this Father’s Day Weekend. I wasn’t familiar with lavash bread, so I used crepes instead, which gave them a wonderful flavor. Next time I would wrap with double crepes because mine fell apart and we had to eat them with a knife and fork. Delicious filling!
