Leftover Turkey Pot Pie

  4.5 – 23 reviews  • Turkey Pot Pie Recipes

After taking it off the grill, you can prevent the surface of the meat from cooling off too quickly by covering it with aluminum foil. It retains its juices during the standing time, preventing the meat from becoming dry. The similar technique may be used to quickly keep hot side dishes or rolls warm while you wait for the rest of the meal.

Prep Time: 15 mins
Cook Time: 50 mins
Additional Time: 5 mins
Total Time: 1 hr 10 mins
Servings: 8
Yield: 2 pot pies

Ingredients

  1. 4 (9 inch) frozen pie crusts, thawed
  2. 1 cup frozen corn
  3. 1 cup frozen peas
  4. 1 cup frozen diced carrots
  5. 2 cups diced cooked turkey
  6. 1 cup gravy
  7. 1 cup diced leftover green beans
  8. 1 tablespoon bacon bits
  9. 1 teaspoon dried parsley
  10. 1 teaspoon dried sage
  11. 1 teaspoon dried thyme
  12. ground black pepper to taste
  13. 1 egg, beaten
  14. 1 teaspoon water

Instructions

  1. Preheat oven to 400 degrees F (200 degrees C). Line 2 pie dishes with prepared pie crusts.
  2. Stir corn, peas, and carrots together in a microwave-safe glass or ceramic bowl and cover the bowl with plastic wrap. Cook in the microwave until tender, 2 to 6 minutes.
  3. Stir corn mixture, turkey, gravy, green beans, bacon bits, parsley, sage, thyme, and black pepper together in a large bowl. Divide turkey mixture even between the two prepared pie dishes. Place remaining crusts over the top of each pie, trim pastry to fit, crimp and pinch the edges together to seal. Cut 4 slits in the top of each pie.
  4. Whisk egg and water together in a small bowl. Brush egg mixture over the top of each pie. Fold a strip of aluminum foil around the outer edges of each pie crust.
  5. Bake in the preheated oven until browned and heated through, about 45 minutes. Cool for 5 to 10 minutes before serving.

It tasted like it was missing something, not enough gravy in mix? Not sure but it wasn’t a 5 star rating, so I gave 3. It was ok

I love how it uses turkey gravy and the seasonings!

This is a great recipe. All my leftovers went in, added fresh broccoli, celery and peas to my turkey, carrots, gravy and as another reviewer suggested, stuffing!! Very happy.

This is a great way to reinvent your leftover turkey dinner. Really makes only one pie though. And you can change up the ingredients depending on your leftovers and it will still be delicious…I didn’t have leftover green beans so used mushrooms instead. Also changed – as recommended by other reviewers – added another 1/2 cup gravy, used real bacon and used 1/2 the amount of herbs. Plus poured more gravy on top to serve. So good!

This turkey pot pie was delicious. Used fresh sage because I had it on hand. Great flavor!

It came out fantastic! Followed the directions exactly, but I added 3 small-medium diced potatoes and par-boiled them (7-8 minutes). If you add potatoes, there’s enough filling for 2 pies! This is definitely a keeper

I used my leftover veggies. I liked the added thyme and sage. Very flavorful. Did not seem like legtivers

Big hit! I chose this recipe because I had leftover turkey and green beans to use. I followed the recipe but didn’t have frozen carrots so just boiled some fresh ones. Also I made my own pie crust. All the fresh ingredients (plus a little bit of bacon grease) made for a really flavorful pot pie. Big winner over here!

Made a few changes. I suateed vegetables in a large frying pan. I made just one large pie. I needed more gravy but I had it and added it on the plates. I also used store bought pie crusts. BEST turkey pot pie I ever made. Everyone loved it and had seconds. The seasoning made all the difference.

all the fisherman loved it!

I made some modifications. Did not have bacon so used a small amount of Campbells Bacon soup (undiluted) instead. Added a can of cream of chicken soup, undiluted. Did not add additional spices listed in the recipe because my turkey already had some spice. Added peas & carrots mixture from T-day dinner that was leftover. Other than these modifications, followed the rest of the recipe. Husband raved about this. To be honest, he LOVES pot pies. I might try adding more spice the next time.

This is super easy. The ingredients are just the right amount for ONE pie, deep dish. I was generous with the gravy. This will be a fun recipe to play with. I think chicken gravy would be better instead of turkey gravy.

Delicious! Great use of leftovers and the kids loved it!

I doubled this recipe as I had quite a lot of leftover turkey. Followed recipe as is except I used 1 pack of real bacon fried crispy and crumbled in place of the faken bits. I used raw carrots and frozen vegetables which I cooked in the microwave for about 5 minutes first. Good flavour however it seems pretty runny.

Good and easy! I only had one double pie shell, and most of the reviewers said it wasn’t enough for two pies, so I put it all in one without reducing the recipe. I was worried it would leak out as it was heaped up pretty high, but I put some turkey stuffing inside around the edges in the hopes it would help prevent leaks. Can’t say for sure if it worked, but it turned out leak-free and beautiful. I added an additional 1/2 cup gravy according to reviewers. Also I don’t think it needed as much extra seasoning, maybe half the amount would have been perfect.

This is a very good recipe for leftovers. I found that this recipe only makes one 9 inch pie. I had 2 tablespoons of mashed potatoes, 1 quarter cup of stuffing, 1 quarter cup of green bean casserole that I added to the other ingredients instead of throwing them away. The bacon adds a delicious flavor! We enjoyed this!

This recipe works very well with rottiserie chicken leftovers, also. I use a can of veg-all and instead of piecrust, I lay pillsbury buttermilk bisquits on top of casserole. Rediculously easy to make and very tasty.

Next time I will use a 1/2 cup more gravy. Little dry but still very tasty. Also good thing I always watch my stuff cooking. I checked on them and at 25 min they were done. If I left it in there for the required time it would have been burnt.
Sergio Burton
I will definitely make this again. It was easy and fast to prepare. The only complaint is that when I cut it to serve, it fell apart. I did wait 10 minutes after taking it out of the oven before cutting into it, but that didn’t seem to help. The taste was good, I might try adding some fresh garlic next time.

I made this with leftover cooked turkey that had been in the freezer for a year and it turned out incredible! Several guests who tried it came back for seconds with plenty of compliments. I’m going to make it again soon!

Absolutely amazing! The only thing I found was that it was only enough filling for one full pot pie rather than two smaller ones.. Other than that, I wouldn’t change a thing! Great use for leftovers!
