Chicken Pesto Saladizza

My 10-year-old daughter created this dish after one of her favorite flatbread sandwiches. Because there is a salad on the pizza, she refers to it as a “Saladizza.” This dish is flavorful, healthy, and fresh. This is a fantastic lunch or dinner dish.

Ingredients

  1. 4 (7 inch) soft round flatbreads
  2. 1 tablespoon olive oil, or as needed
  3. ¼ cup spinach pesto
  4. 4 ounces mozzarella cheese, shredded
  5. 4 cups chopped romaine lettuce
  6. 10 ounces grilled chicken breasts, sliced into bite-sized pieces
  7. 2 Roma tomatoes, seeded and chopped
  8. 4 teaspoons grated Parmesan cheese (Optional)

Instructions

  1. Preheat an outdoor grill for medium heat and lightly oil the grate.
  2. Brush the surface of each flatbread round with olive oil. Flip over and spread 1 tablespoon spinach pesto and 1/4 cup mozzarella cheese over each.
  3. Place flatbreads oiled-side down on the grill. Cook until cheese melts, 2 to 3 minutes. Place flatbreads on a heat-proof plate. Top each with 1 cup romaine lettuce, 2 1/2 ounces grilled chicken, 1/4 of the tomatoes, and 1 teaspoon Parmesan cheese.
  4. You can use any prepared chicken that you have on hand: rotisserie, slow cooked, poached, baked, etc.
  5. These can also be oven-baked for 3 to 5 minutes at 350 degrees F (175 degrees C).
