This is the normal pancake recipe that my Australian friend uses. The pikelet is the southern British crumpet’s Scottish equivalent. They work well for afternoon teas as well. Serve with sugar and freshly squeezed lemon juice, or with butter and jam. Up until I tried these, I always thought my pancake recipe was the best in the world.

Ingredients
- ¼ cup chia seeds
- ½ cup water
- 2 cups frozen raspberries
- ½ cup frozen blackberries
- ½ cup frozen blueberries
- 2 frozen strawberries, or more to taste
- ⅓ cup honey, or more to taste
Instructions
- Soak chia seeds in water until mixture has a jelly-like texture, about 5 minutes.
- Heat raspberries, blackberries, blueberries, strawberries, and honey in a saucepan over medium heat until berries are soft, about 15 minutes. Lightly crush berries with a fork or masher.
- Stir chia seed mixture into berry mixture. Remove from heat and let cool for at least 10 minutes.

So easy, and so delicious. I used fresh strawberries and cherries, and then after cooking, removed the pits and added the chia seeds and water. Perfect texture, looks just like jam, but much healthier.

I like it! I used 5 cup of dried apricots and let them sock over night. Drain and rinse them the nest day, chopped them up in the food processer. It turn out perfect. I am using this recipe for all of my jams. It is easy and taste Good! I did have to add 1/4 cup of sugar, it helped to bring out the flavor better. Canned in a boiling water bath for about 15 minutes and giving them away as Chrisman Gifts. I like it because it is not really sweet like most jams.

So delicious and tastes so healthy! I had enough honey for what the recipe called for but found it a little too tart so then added some real maple syrup to taste. I also used fresh strawberries because they are currently in season. Thank you for such an amazing recipe. I won’t buy store bought jam again because I now know that the natural thickened state of chia seeds make a perfect jam packed with nutrition.

Very good alternative to regular jam; no pectin and uses way less sugar. Definitely a healthier jam.

I blended cooked fruit with vita mix and added white sugar. Turned out great! Next up: blue grapes from ontario…I think it’ll taste like concord grape jam.
Love this! I made these adjustments per what I had available; agave instead of honey and costco’s frozen “nature’s 3 berries” and their frozen strawberries. Came out great!
This is a great base recipe for any chia jam you might want to make! I used strawberries and rhubarb! Oh my goodness, it turned out so well!
