Galettes are simple, free-form small pies. You can assemble them quickly and effortlessly, then enjoy them hot from the oven! Simple, modest, and lovely.

Ingredients

  1. 4 cups thinly sliced apples
  2. 2 tablespoons white sugar, or more to taste
  3. 1 tablespoon cornstarch
  4. ½ teaspoon ground cinnamon
  5. ½ teaspoon vanilla extract
  6. 1 (9 inch) prepared pie crust (such as Pillsbury®)

Instructions

  1. Preheat oven to 400 degrees F (200 degrees C). Grease a baking sheet.
  2. Combine apples, sugar, cornstarch, cinnamon, and vanilla extract together in a bowl. Place pie crust on the prepared baking sheet. Spoon apple mixture into the center of crust, leaving a 2-inch border. Fold crust over the edges of the apple mixture.
  3. Bake in the preheated oven until apples are tender and crust is golden, about 30 minutes.
  4. Substitute pears or peaches for the apples, if desired. Apple pie spice can be substituted for the cinnamon, if desired.
  5. A 1/2 cup of blueberries, blackberries, or raspberries can also be added.
  6. If you want extra sparkle, brush the crust with a glaze of 1 egg white, 1 tablespoon water, and then sprinkle a teaspoon sugar over the crust and fruit.

My go-to recipe for any type of fruit Galette. I double all the ingredients for the sugar / cornstarch toss. I like to add a little lemon zest to this mix. I substitute the sugar using a Stevia blend made for baking (it measures out just like sugar). Mix sliced fruit with the vanilla extract then combine with the dry ingredients. Have fun assembling. Don’t forget the egg wash. After baking top lightly with just a little real sugar on the crust for sparkle! Fantastic served on its own – over the top with a scoop of vanilla ice cream. Your gong to want to make two at a time!

This is so simple with the possibility of so many variations. Next time, I may try a drizzle of Sanders caramel in the rim of the crust, just before folding it over; I do this with my upside down apple pie, and it’s luscious, just don’t overdo it. Bet there’ll be no crust left behind! Thanks 😀

Swapped apples for pears because I had pears I needed to use up, used the pie dough roll found in the refrigerated section, and added almonds & oats for more texture!

The recipe worked a treat as it was. I picked this because I had leftover pie dough that wasn’t quite enough for a second pie. Otherwise, did everything the same. If I were to make it again, I would drizzle a little lemon juice over the apples to give a little more acid and dust the pie with powdered sugar to serve, but that’s just personal preference.

This was super easy to prepare, with the added benefit of having a little “wow” factor in presentation. It tasted great, but if you’re looking for a gooey pie filling, this is not it. The taste was not too sweet or overly sugary, which we appreciated. My family loved it, and I would definitely make it again.
