Brussels Sprouts with Almonds and Manchego

My go-to vegetable dish for any special occasion is this. It takes little time to prepare. The cheese and almonds give the Brussels the ideal amount of delicate, complementary flavors!

Ingredients

  1. 2 pounds Brussels sprouts, cut in half
  2. 3 tablespoons olive oil
  3. salt and ground black pepper to taste
  4. ⅓ cup sliced almonds
  5. 2 ounces Manchego cheese, shredded
  6. 3 tablespoons lemon juice
  7. 1 lemon, zested

Instructions

  1. Preheat the oven to 450 degrees F (230 degrees C).
  2. Toss Brussels sprouts in olive oil. Arrange on a baking sheet, cut-side down. Season with salt and pepper.
  3. Bake in the preheated oven until Brussels begin to get tender, about 10 minutes. Remove from the oven; sprinkle with sliced almonds. Return to the oven and continue cooking until sprouts begin to crisp and brown on the edges and almonds are toasted, 15 to 20 minutes more.
  4. Remove from the oven and transfer to a medium serving bowl. Add Manchego cheese, lemon juice and lemon zest; mix until sprouts are well coated. Season with salt and pepper.
  5. If you don’t have a fresh lemon for the zest, the recipe also works with just the lemon juice. Also, if you’re in a hurry and need to save time, you can buy bags of Brussels sprouts that are already cut in half. Make sure to use pre-cut veggies the same day or the day after purchase.

The roasting technique worked beautifully and I loved the crunch of the almond slices. Manchego pairs well with the Brussels sprouts. The issue was the lemon was overpowering for both my husband and myself. I’d omit the zest and cut back to 1Tbsp fresh lemon juice.

Delicious! My family loves brussel sprouts so I make them in a variety ways. This recipe is simple but elegant. The manchengo/lemon combination adds a different contrast and alternative to parmesan cheese. I didn’t change a thing. Thanks for sharing.
