Ingredients
- 1 cup egg substitute
- 1 egg
- 3 green onions, thinly sliced
- 8 pepperoni slices, diced
- ½ teaspoon garlic powder
- 1 teaspoon melted butter
- ¼ cup grated Romano cheese
- 1 pinch salt and ground black pepper to taste
Instructions
- Whisk egg substitute, egg, green onions, pepperoni slices, and garlic powder together in a bowl.
- Heat butter in a non-stick skillet over low heat; add egg mixture, cover skillet, and cook until eggs are set, 10 to 15 minutes. Sprinkle Romano cheese over eggs and season with salt and pepper.

Excellent recipe!
For one person: 2 eggs scrambled in bowl, chop pepperoni in 1/4 s and put in hot pan for few seconds to crisp up and release fat, add egg scramble, cheese (sharp cheddar shredded) and fold over. No milk, no butter, no scallion, though I will add it next time. Probably would also add a dash of siracha sauce at end…
Recipe was good and something different for our Sunday brunch that I make for husband and myself. I made some modifications – added a little bell pepper, as one comment said, and also added diced baby bella mushrooms. I did not add onion since we don’t like it in eggs and also omitted garlic powder, which we do not like. Used 4 eggs, rather than egg whites. My husband likes his eggs over-easy, so wasn’t sure how he would like this. Asked him to rate: make again, eat if I make it, or never again. He said Make Again, so this is a keeper!
This was okay at best. Wouldn’t make it again.
Simple but delicious. I needed something quick and didn’t want just plain scrambled eggs.
I’m not much of a cook, but this recipe is so creative and seems easy to follow that I’m definitely going to attempt it!
OMG – who knew eggs and pepperoni could make such a wonderful combination! This was so good and what a great way to liven up scrambled eggs. I used 1/2 cup of egg substitute and 2 whole eggs as egg substitute tends to be a little watery. I fried a little green pepper along with the onion and added a little chopped tomato to get in some extra veggies. I also used minced garlic vs. garlic powder. You could easily but this inside a tortilla for a really awesome breakfast wrap! This recipe is a definite keeper!
We LOVED these! I didn’t have any egg substitute, so I just used regular whole eggs (4 eggs are equal to 1 cup egg sub.). Made as written otherwise. So simple and they were perfectly done at the 10 minute mark. The whole family gobbled these up…HUGE hit and a definite keeper~YUM! Thanks for sharing. 🙂
