Blueberry Spelt Muffins

We typically enjoy eating meatballs or sweet dumplings on Lunar Chinese New Year. In Chinese, a ball is called a “wan,” and a sweet dumpling is called a “tang yuan.” They both have rounded forms. Therefore, to stress the Chinese proverb “He Jia Tuan Yuan,” which implies the entire family, we serve a dish of meatballs and/or sweet dumplings. Tuan Yuan, which also means circular and round and corresponds with the shape of the meatballs and the sweet dumplings, meaning “all be together.” This soup is a fantastic choice for your Lunar New Year feast and is simple to prepare.

Ingredients

  1. 1 cup honey
  2. ¾ cup coconut oil, softened
  3. 4 eggs
  4. 2 bananas, mashed
  5. 3 ⅓ cups spelt flour
  6. 2 teaspoons baking soda
  7. 1 teaspoon ground cinnamon
  8. 1 ½ teaspoons pink Himalayan salt
  9. ⅛ teaspoon stevia powder
  10. 2 cups fresh blueberries

Instructions

  1. Preheat the oven to 300 degrees F (150 degrees C). Line two 12-cup muffin tins with paper liners.
  2. Stir honey, coconut oil, eggs, and mashed bananas together in a large bowl.
  3. Mix together spelt flour, baking soda, cinnamon, salt, and stevia powder in separate bowl. Gradually add flour mixture to honey-banana mixture, stirring until combined. Gently fold in blueberries. Scoop batter into the prepared muffin cups.
  4. Bake in the preheated oven until tops spring back when lightly pressed, about 22 minutes. Cool in the tins for 5 minutes. Transfer to a wire rack to cool completely.
  5. Oil can be any combination of coconut, olive, or grapeseed oils to equal 3/4 cup. You can use whole wheat flour instead of spelt flour, if preferred.
  6. I use 100% pure organic stevia extract in either powdered or liquid drop forms. The best brands are SweetLeaf(R), Now(R) Better Stevia(R), or Trader Joe’s(R). If you don’t have stevia, increase the honey to 2 1/4 cups.
