Ingredients

  1. 1 cup bran flakes cereal
  2. ⅜ cup whole wheat flour
  3. ⅜ cup all-purpose flour
  4. 2 ½ teaspoons baking powder
  5. ¼ teaspoon salt
  6. 1 cup applesauce
  7. ½ cup white sugar
  8. ¼ cup vegetable oil
  9. 1 egg, beaten

Instructions

  1. Preheat oven to 400 degrees F (200 degrees C). Grease 12 muffin cups or line with paper liners.
  2. Combine bran flakes cereal, whole wheat flour, all-purpose flour, baking powder, and salt in a bowl. Whisk applesauce, sugar, vegetable oil, and egg together in a separate bowl; stir into flour mixture until just combined. Fill muffin cups about 2/3-full with batter.
  3. Bake in the preheated oven until a toothpick inserted in the center of a muffin comes out clean, about 15 minutes. Cool in the pan for 5 minutes on a wire rack; serve warm.
  4. Flavor Variations: Try cinnamon (or another flavor) applesauce in place of plain. For peanut butter muffins – add 2/3 cup peanut butter and 1 1/2 teaspoon baking soda. Especially good with a teaspoon of jelly baked into each muffin. For spiced muffins – add 1/2 teaspoon ground clove and 2 teaspoons vanilla extract. For banana spice muffins – add 2 medium bananas (mashed), 1/2 teaspoon nutmeg, 1 teaspoon vanilla extract. For maple muffins – add 1/3 cup maple syrup or 1 teaspoon maple extract (syrup makes a moister muffin).

I went by the recipe exactly….. EXCEPT… I added about 1/3 cup chopped pecans. And I finely diced some apple to put into the applesauce. Turned out very good.

I cooked the muffins in silicon pans, rather than in greased tins or cupcake papers. They turned out so tender & delicious. I also like some chopped pecans in them.

These were overly moist/wet muffins, and I wouldn’t make again. Did cutback sugar to 1/4 cup white plus 1 tbls. brown sugar. Added 1/3 cup raisins, 3tbls. walnuts, 1 teas apple pie spice, 1 tbls wheat germ. Subbed 2 tbls applesauce for 2 tbls of the oil. They were small and didn’t rise much. Baked 3 extra minutes. They were definitely done but just too moist – feared that since there was so little dry ingredients.

3 18 18 … https://www.allrecipes.com/recipe/232845/vs-apple-bran-muffins/ … Well … I subbed some, but not so far “out” that my review is worthless. 😀 Lowdown: Flat tops & too sweet. “Apple,” it isn’t – without apple added. I used 3/4c AllBran for flakes – thinking no air pockets as with flakes. :/ 🙂

I made these just like the recipe with small exceptions. I didn’t have wheat flour so I used white and I baked at 375 degrees because I was using a nonstick pan. They turned out moist and delicious, just like the kind I used to love at snack time as a preschooler.

I added a teaspoon of homemade apple pie spice. I made no other changes. These were just okay. VERY dry. This was one of the few times my kids did not finish a whole muffin and they will usually eat 2-3 each in the morning.

I found after I was ready to add the applesauce that I didn’t have any!! So I used butter. I also used coconut milk instead of regular milk. They are light and moist and fantastic!! Just try them and see.
