Ingredients

  1. 1 serving cooking spray
  2. 1 ¼ cups milk
  3. ¼ cup vinegar
  4. ¼ cup oil
  5. 1 egg
  6. 1 ¼ cups all-purpose flour
  7. ¼ cup white sugar
  8. 1 teaspoon baking powder
  9. 1 teaspoon baking soda
  10. ¼ teaspoon salt

Instructions

  1. Preheat oven to 375 degrees F (190 degrees C). Spray 2 mini muffin tins with cooking spray.
  2. Mix milk and vinegar together in a bowl; let stand until milk curdles, about 5 minutes. Beat in oil and egg.
  3. Combine flour, sugar, baking powder, baking soda, and salt in a bowl; stir into milk mixture until smooth. Spoon batter into the prepared muffin tins with a tablespoon or a small batter scoop.
  4. Bake in the preheated oven until batter is risen and still pale, about 8 minutes. Remove from muffin cups with a silicone scraper.
  5. Buttermilk can be substituted for the milk and vinegar if desired.
  6. These baked in 8 to 9 minutes in one of my ovens but took only 7 to 8 minutes in the other one, so just watch them.

It’s a Good recipe if you just use milk. Vinegar? Ewwww. If you want buttermilk taste, just use buttermilk.

This is a good recipe. My issue is the amount of vinegar is WAY too much and doesn’t specify white. It only takes 1Tbs per cup of milk to make DIY buttermilk. This is calling for 1/4 cup and that’s 4 times the amount necessary. 1Tbs plus few drops more will be enough for this amount of milk. Also lemon juice is acceptable at the same amount. Hope this helps those sensitive to the vinegar. Also you can replace this with yogurt 1/1. No mixing or waiting for the souring process.

Delicious! The recipe worked great. I used only 2 T of sugar and they were still quite sweet. Now I use just 1 T of sugar. Baking time required 10 minutes in my oven rather than 8 as suggested. 1 batch makes 36 mini muffins. A dbl batch makes 36 mini & 12 standard.

I think it would be good if you would put no vinegar. If you even tried to put a lot of syrup & jam you would still taste the vinegar.

My kids absolutely love these! I put a few mini chocolate chips in each one. A few times I have put collagen protein in the mix just to get a little protein boost. It didn’t change the flavor at all. I do usually have to bake them for 11-12 minutes. I’ll also double the recipe because they freeze great for a quick breakfast.

Very tasty and easy! I used buttermilk. The poppers rose perfectly, and since we are all adults in my home, one bite per popper! I read the reviews and noted the addition of chocolate chips, fruit, nuts, etc. Great ideas to try…but for us, the recipe worked all on its own topped with maple syrup! Thanks for the great additions…and also for the basic recipe…a winner.

Absolutely fantastic. Followed the recipe exactly, except I used a regular muffin tin and so baked them for 16 minutes. Added chocolate chips to half the muffins. They came out the perfect consistency. We dipped in maple syrup. This will become a breakfast staple.

Made these this morning and they were so much better than regular pancakes. I used buttermilk and halve the recipe (cause we don’t need that many) Added a few chocolate chips to half and sliced strawberries to the other half. Can’t wait to make again! Thank you

I love these little poppers. I followed the recipe except for the top of them. A half a teaspoon of apricot all fruit and a nice handful of pecan pieces. I used greased regular muffin tins and only filled them about half full. Oh, I guess I did add a teaspoon and a half of vanilla. Next time maybe I will try red raspberry preserves. grammagennie

Oh. My. Gosh. These are the best things ever made on this planet. My whole family completely destroyed them. They are really good and taste way better than actual pancakes. What is really fun about these is that you can put syrup and chocolate chips and anything else that you would put on normal pancakes. A+ these are amazing

I gave this a 2 rating mainly because of me. I have no idea what I did wrong. I followed the recipe to the T… and the did rise… then….. they sunk in and I had cups in the shape of the pan. and they stuck to the pan. I didn’t see that coming. also my company.. oh boy.. was not impressed. I shouldn’t try a new recipe when I have guest.

These are great! So fast and easy, I used buttermilk powder. I made different kinds by adding blueberries, raspberries, mini chocolate chips. I used both mini and regular size muffin tins. My kids ate these right up! We will make these again soon. Thank you
