the zucchini bread from Starbucks®. Sweet potatoes, in my opinion, would go well with zucchini. Even children will love this delicious breakfast treat! Serve with some butter and maple syrup. Yum!

Ingredients

  1. 1 cup plain yogurt
  2. ½ teaspoon white sugar, or to taste
  3. salt to taste
  4. freshly ground black pepper to taste
  5. 1 cup shredded fresh spinach
  6. ½ cup dates, pitted and chopped
  7. 1 pinch red pepper flakes

Instructions

  1. Mix yogurt, sugar, salt, and black pepper together in a bowl. Add spinach and dates; stir to combine. Sprinkle with red pepper flakes.

This salad fit the bill exactly – I searched for a salad that used dates and spinach. It came together very quickly with just a handful of ingredients. The yogurt dressing was creamy (I used whole milk plain yogurt.). A nice change-up on spinach salad. Thanks for posting the recipe.
