Ingredients
- 1 (15 ounce) can Libby’s® Pear Halves
- 2 eggs
- 1 cup sugar
- 2 cups flour
- 1 teaspoon salt
- 2 teaspoons baking soda
- 4 tablespoons butter, softened
- 3 cups confectioners’ sugar
- 1 teaspoon cinnamon
- 1 teaspoon vanilla extract
- 1 tablespoon milk, or more as needed
Instructions
- Preheat oven to 350 degrees F. Grease 9×13 baking pan.
- Cut pears into bite-sized pieces, reserving juice.
- In large bowl, stir eggs and sugar together. Add pears and juice, stirring to combine. Stir in flour, salt and baking soda. Pour into greased pan.
- Bake at 350 degrees for 23-30 minutes, until toothpick inserted in middle comes out clean.
- Cool before frosting.
- Place butter in mixing bowl.
- Sift together powdered sugar and cinnamon. Add to mixing bowl and beat with vanilla.
- Add milk 1 tablespoon at a time until desired consistency is reached.

I made the cake and added one teaspoon of cinnamon to the batter. My preference is cinnamon in the cake and not in the frosting. The cake is delicious!
When I first cut into the cake I thought that it looked soggy because of the pears but it turned out that although it was quite moist it did still have a firm spring to it. This is the perfect recipe for using up all the canned pears I have in storage and the cinnamon flavored icing was the perfect combination for this cake. The cake itself is not terribly sweet but the icing makes up for it.
Love this icing going to use it again this Tuesday night for my husband birthday cake it was a hit at my daughter’s baby shower
