Turkey, Cranberry, and Spinach Roll-Ups

Fish recipe that is simple and straightforward. Anything white will do! The spinach will even be devoured by children! (This dish is a favorite of my 4-year-old!) It’s okay to change the ingredients in this recipe that my aunt sent me because she used a little bit of this and a little bit of that.

Ingredients

  1. 1 (8 ounce) package cream cheese, at room temperature
  2. 4 large whole-wheat sandwich wrap
  3. ¼ cup sweetened dried cranberries (such as Craisins®), or to taste
  4. 12 slices turkey lunch meat
  5. 1 cup fresh spinach, or to taste

Instructions

  1. Spread 1/4 of the cream cheese onto the middle of each sandwich wrap. Sprinkle 1 tablespoon cranberries onto cream cheese on each wrap. Arrange 3 slices turkey atop each wrap to cover most of wrap. Spread 1/4 cup spinach atop turkey.
  2. Tightly roll wrap around fillings into a cylinder; cut into about twenty 1 1/4-inch slices; arrange on a serving platter.

So good for you and delicious! I have made this several times over, and the only things I have added are a smidge of water to aid in getting the cranberries and cream cheese together, and put in the food processor this last time a handful of crushed pecans to sneak them in on my child. It’s wonderful even without these additions, especially if you let the cream cheese come to room temp first; if not a smidge of water works fine to combine the spread for this.

I made this as a wrap, not an appetizer. I only put cream cheese on half and it was just the right amount. I used spinach tortillas too.

I needed to make some finger food for a funeral luncheon and decided to try these. They taste great but are time consuming to make. I always have a problem rolling roll-ups tight, and I hate wasting the ends. I think I would use the same filling but make sandwiches on whole wheat bread if I were to make these again.
