Ingredients
- 2 tablespoons olive oil, divided
- 1 large onion, halved and thinly sliced
- 4 pork loin chops, 1 inch thick
- salt to taste
- black pepper to taste
- 1 pinch garlic powder to taste
- ½ pint red grape tomatoes, halved
- ½ pint yellow grape tomatoes, halved
- 3 cloves garlic, diced
- 1 tablespoon dried basil
- 2 ½ teaspoons balsamic vinegar
- 4 ounces feta cheese, crumbled
Instructions
- Heat 1 tablespoon olive oil in a skillet over medium heat. Stir in onion and cook until golden brown; transfer onion to a plate and set aside.
- Heat 1/2 tablespoon olive oil in the skillet. Season pork chops with salt, pepper, and garlic powder; place in the skillet and cook to desired doneness. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C). Set aside and keep warm.
- Heat remaining olive oil in the skillet; add cooked onion, tomatoes, garlic, and basil. Cook and stir until tomatoes are tender, about 3 minutes. Mix in balsamic vinegar, and season with salt and pepper.
- Top chops with the onion and tomato mixture, and sprinkle with feta cheese to serve.

We didn’t think a pork chop has the right texture for this recipe. However, the sauce is a great basic sauce that would be good just with bread, or chicken as other’s have mentioned. Probably good with scrambled eggs for a wonderful brunch. I too replaced fresh basil for the dry, the equivalent is 1/4 cup of fresh basil. Of course, I added extra garlic as well.

It is a great recipe. I loved it exactly as it is. I used feta cheese but I think it also would work with blue cheese, if you cannot get the feta. I accompanied it with Sally’s mashed potatoes & spinach, also an allrecipes.com recipe. It was a delicious lunch!

Oh. My. God. This is delicious! If you’re like me and don’t really like pork, this recipe may just change your mind. It’s amazing! We make it all the time now. As another reviewer suggested, I also used 2 cans of diced tomatoes. I add the juice from one can. If I don’t have basil, I don’t miss it. I’ve kept everything else the same.

Wow! The flavor! I took extra time to caramelize the onions. Next time I’ll use 2 onions since it reduces so much. chopped fresh basil worked great.

I made this recipe as written except for using thinner pork chops that were on sale. I just adjusted the cooking time and it worked well. My husband suggested adding this to our regular rotation so I think it was a hit! Tasty and fairly quick to prepare makes it a hit with me.
Everyone liked it and it was a great way to use up the bounty of grape tomatoes at this time of year.
