Tarred Roof Cake

This is a specialty of the Massachusetts island of Nantucket. My grandma used to cook it for me when I was a little girl. If preferred, substitute your preferred vanilla icing recipe for the store-bought. It tastes great with a nice glass of cold milk.

Ingredients

  1. 2 eggs, beaten
  2. 1 cup sugar
  3. 1 cup all-purpose flour
  4. 1 pinch salt
  5. 2 teaspoons baking powder
  6. 1 teaspoon vanilla extract
  7. ½ cup milk, warmed
  8. 1 ½ tablespoons butter, melted
  9. 1 (16 ounce) container prepared vanilla frosting
  10. 2 (1 ounce) squares bittersweet chocolate, melted

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a 9×13 inch baking pan.
  2. In a large bowl, mix together the eggs, sugar, flour, salt, baking powder and vanilla. Stir in the warm milk and butter until well blended. Pour into the prepared pan, and spread evenly.
  3. Bake for 35 to 40 minutes in the preheated oven, until a toothpick inserted into the center comes out clean. Cool cake completely before frosting.
  4. Spread vanilla frosting over the top of the cake, then drizzle with the bittersweet chocolate. Let the chocolate cool and harden before serving.

There needs to be 1 3/4 cup flour. I can almost guarantee the batter came out on the liquidy side. Most cake and sweet type bread recipes call for that amount. So try doing 1 3/4 cup of flour instead of only 1 and there’ll be a huge difference. Other than that this recipe looks on point and should come out great. 🙂

I felt bad for this one, I took the other review to heart and added a block of cream cheese, lemon extract & the zest of a lemon. This cake was Dense and not in a good way. 9×13 pan, Really?? No, it would have been way too thin. I used a 3qt casserole dish. Not sure why this recipe doesn’t work. Sorry.

I followed this recipe step by step. The recipe is terrible as well as the end result. I would not recommend cooking this again unless someone else tries it and make some serious changes.
