Green feta salad is delicious and perfect for summer evenings. You can add as many fruits and veggies as you like. Depending on the season, I normally add pears or tangerines.

Ingredients

  1. 4 tablespoons olive oil
  2. 2 tablespoons white wine vinegar
  3. 1 tablespoon Dijon mustard
  4. ½ teaspoon salt
  5. ½ teaspoon ground black pepper
  6. 1 pinch white sugar
  7. 1 teaspoon chopped fresh parsley
  8. 1 teaspoon fresh lemon juice
  9. 2 cloves garlic, chopped
  10. 1 avocados – peeled, pitted, and cubed
  11. 4 cups mixed salad greens
  12. ½ cup sliced almonds
  13. 2 ounces feta cheese, crumbled

Instructions

  1. In a large bowl, whisk together the olive oil, white wine vinegar, mustard, salt, pepper, sugar, parsley, lemon juice and garlic. Add the avocado, and stir to coat with the dressing.
  2. Just before serving, add the salad greens, and toss to coat with dressing. Sprinkle sliced almonds and feta cheese over the top.

This salad is super delicious! I added a cucumber and much more parsley then called for, but all in all it was excellent. I have never thought of using avocado and feta in the same salad. Salads like these make being healthy very easy an fun!

Nothing special. I added dried cherries to it and some toasted walnuts and black sesame seeds, since it just seemed too plain. Both of us were not too crazy about the dressing. It was WAY too tart and that was after I added a little sugar and it had too much dijon mustard although my husband didn’t notice that much. The dressing definitely needs improving. This salad was just ok there are much better ones out there.

I brought this to our band practice last night. Made it as written, with romaine, but just throwing the avocado in with the feta and almonds. Everyone raved about it and asked what was in the dressing! For those of you who thought there was too much garlic, make the dressing hours ahead and let it sit on the counter (not fridge). This will marinate the garlic, taking out the “ bite!” Don’t leave out the almonds, they’re perfect in this salad! Delish!!

I added an additional tablespoon of olive oil to tone it down just a tad! It was fabulous! I just made a large batch of the dressing, so all I need to add is avacado and salad greens.

I made this for a pitch-in and there was not a smidgen left. Everyone loved it and asked for the recipe. For the greens, I used a mixture of kale and Romaine. The only changes I made were to increase the feta and almonds a bit. This is a great combination of flavors that I will make again!

Delicious! Yes, it’s garlicky – but oh so good. I did mince the garlic in a press, just so it didn’t crunch – and the flavor was fantastic. I think you could add almost anything from tomatoes to fruit and still maintain the integrity of these flavors.
