CRAWFISH IS MY FAVORITE!! You’ll adore this recipe if you enjoy creamy pasta dishes and crawfish. It was originally designed for my husband, but I ended up making it for his team at work as well!

Ingredients

  1. 3 tablespoons butter, divided
  2. 3 tablespoons brown sugar
  3. 3 tablespoons frozen orange juice concentrate, thawed
  4. 3 tablespoons brandy
  5. 2 acorn squash, halved and seeded

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C). Melt 1 tablespoon butter in a 9×13 inch baking dish. Coat pan evenly with melted butter.
  2. In a saucepan, mix the remaining butter, brown sugar, frozen orange juice concentrate, and brandy . Bring to a boil, and remove from heat.
  3. Place squash halves cut side down in the baking dish, and bake 30 minutes, or until easily pierced with a knife. Turn squash over, and drizzle with the sauce. Continue baking 15 minutes. Cool slightly before serving.

This recipe was very simple to prepare and tasted delicious. The only changes I made, because none of us like the tastes of brandy, etc., was to add water in the same amount I would have if putting the brandy in. Love it, a real keeper!

My guardian made this for me as a child and I’ve always loved it. However, she prepared it slightly different than presented here–as we didn’t consume alcohol. She’d coat the insides of the squash with brown sugar, wrap them in foil, place them face down in the baking dish THEN bake. Once done she’d garnish the squash with a few tablespoons of sour cream.

I like squash in almost any form but this recipe was over the top! Wonderful side dish and easy to make. Instead of frozen orange juice I squeezed a fresh orange. Will definitely make again.

I noticed that there are few reviews and those are quite a few years back. I do hope that does not mean it is not being cooked as it is really yummy! I don’t have concentrate so just used orange juice and it worked just fine. If you like yours sweet, you might add a little more brown sugar.

Wonderful acorn squash recipe! My husband is not normally a huge fan of most squash, and even he thought this was a great dish. The orange brandy sauce really makes it; I did not have regular brandy, but I did have a bottle of Cointreau (orange brandy) which was wonderful because it only added to the orange flavor. I also used fresh o.j. right out of the fridge, since I never keep the concentrated stuff around. Delicious recipe!

A nice change of pace, but the orange flavour was a little overwhelming. Do yourself or the dishwasher a favour, and put some foil in the bottom of the pan. The sugar in the sauce makes a terrible burnt mess.

I fixed this for Christmas dinner. Although I’m not a big squash lover, I have to admit, this was very tasty. My mom, dad and husband “loved” it and my dad even asked for the recipe. I followed the directions to the letter and wouldn’t suggest changing anything. I’ll fix this again.
