Russian Tomato Salad Bruschetta

Any grilled food is great with this flavorful Asian marinade! Use the marinade to prepare grilled meat up to 24 hours ahead of time, or simply brush it with the marinade right before grilling.

Ingredients

  1. 1 clove garlic, crushed
  2. 2 tablespoons olive oil
  3. 2 tablespoons plain yogurt
  4. ¼ cup sour cream, or to taste
  5. ½ cup thinly sliced sweet onion
  6. 2 cups thinly sliced tomatoes
  7. salt and freshly ground black pepper to taste
  8. 1 pinch cayenne pepper, or to taste
  9. 8 thick slices French bread
  10. 1 tablespoon sliced fresh chives

Instructions

  1. Mix garlic and olive oil in a small bowl and let sit for about 1 hour, or until needed.
  2. Mix the yogurt and sour cream together in a bowl until combined. Add the onions and tomatoes and toss until well coated. Season with salt, freshly ground black pepper, and cayenne. Wrap in plastic wrap and chill in a refrigerator until needed.
  3. Preheat a charcoal grill until coals are white and ashy.
  4. Grill bread over hot charcoal, rotating as needed, until both sides are nicely toasted and slightly charred.
  5. Brush grilled bread with the garlic olive oil and use a slotted spoon to transfer the tomato salad over top of each. Excess dressing can be spooned over if desired. Garnish with chives and serve immediately.
  6. You can use a yellow onion instead of a sweet onion; however, this amount could be overpowering. You can soak them, rinse, and dry them off before using to make them a little more mild. Or, you can blanche and boil for about 10 seconds, or saute them, to make them a lot more mild.
  7. Fresh dill or basil works well instead of chives, if preferred. You can use Italian bread instead of French.

What a fun and tasty spin on Bruschetta!! I would absolutely make again! My husband devoured and I it! I also think you could sub fresh Basil for the chives if that’s what you had on hand. My only minor complaint; smashing the garlic clove and then adding the olive oil; I get it! It’s to infuse the oil but the clove pieces fall off the bread when grilling. The few bits that cling to the bread were delicious! Also – I did on a gas grill for quick results- especially since I only fired it up for this recipe/this step. I have never grilled French bread like this so that new idea alone I will copy again for other meals! Thanks again for the tasty side dish or appetizer!!
