Ingredients

  1. 3 heads garlic
  2. 2 tablespoons olive oil
  3. 1 (1 pound) loaf Italian bread
  4. ½ cup butter, softened
  5. 2 tablespoons grated Parmesan cheese (Optional)
  6. 1 tablespoon chopped fresh parsley (Optional)

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C).
  2. Slice the tops off of garlic heads, so the tip of each clove is exposed. Place garlic heads, cut-sides up, on a baking sheet; drizzle tops with olive oil.
  3. Bake in the preheated oven until garlic is soft, about 30 minutes.
  4. Set the oven to broil.
  5. Slice bread loaf in half horizontally; place cut-side up on a baking sheet.
  6. Squeeze garlic cloves from their skins into a medium bowl. Stir in butter, Parmesan cheese, and parsley until well blended. Spread onto the cut sides of bread.
  7. Broil bread until toasted, about 5 minutes.

This was good, and I’ve made it this way for years. I suggest taking it to the next level by using smoke roasted garlic. I smoke roast the garlic when I fire up the smoker for anything else.

Made it without changing a thing. It was too much butter for 3 small heads of garlic. Directions don’t say what size garlic so I’m assuming 3 large heads is what is required for this recipe. I made it again and this time I used 7 small heads of garlic and it was much better. I even used it with baked French fries. Yummy!
