Alaska Salmon Bake with Pecan Crunch Coating

The family frequently requests that I cook this traditional spaghetti dish with baby bella mushrooms! Everyone enjoys this delicious, simple-to-make supper!

Ingredients

  1. 3 tablespoons Dijon mustard
  2. 3 tablespoons butter, melted
  3. 5 teaspoons honey
  4. ½ cup fresh bread crumbs
  5. ½ cup finely chopped pecans
  6. 3 teaspoons chopped fresh parsley
  7. 6 (4 ounce) fillets salmon
  8. salt and pepper to taste
  9. 6 lemon wedges

Instructions

  1. Preheat the oven to 400 degrees F (200 degrees C). In a small bowl, mix together the mustard, butter, and honey. In another bowl, mix together the bread crumbs, pecans, and parsley.
  2. Season each salmon fillet with salt and pepper. Place on a lightly greased baking sheet. Brush with mustard-honey mixture. Cover the top of each fillet with bread crumb mixture.
  3. Bake for 10 minutes per inch of thickness, measured at thickest part, or until salmon just flakes when tested with a fork. Serve garnished with lemon wedges.

Good. I brushed the sauce but did not add all of the sauce. Will add all of the sauce next time. After baking I added a bit of crispy chili oil heated with garlic on top. Ate this with coconut rice.

This is by far the best baked salmon recipe I have tried thus far. The honey mustard sauce is a great blend of sweet and savory. The pecans and breadcrumbs give the salmon a wonderful texture. I took left-overs to work the next day. It might have even been better on the second day!

This is a very good salmon recipe. I did swap out the butter in the honey-mustard sauce with mayonnaise and used spicy brown mustard instead of Dijon. It made a creamier and bit spicier layer for the pecan-crumb mixture to sit upon. I winged it with the quantities of things since it is only my husband and I, and I didn’t need four additional pieces of fish. I will make it again and use butter just to see the taste difference. The Mayonnaise with the honey and spicy mustard were a very good complement to the fish. Just don’t use too much mayonnaise as it will overpower the salmon and pecan topping. This recipe is a keeper, and will be made again. My husband said it was very good.
