Crispy chicken Cordon Bleu packed with ham and cheese that has been air-fried. For a dinner that is both complete and filling, serve with a steamed vegetable.

Ingredients
- 2 boneless, skinless chicken breasts
- salt and ground black pepper to taste
- 1 tablespoon Dijon mustard
- 4 slices deli Swiss cheese
- 4 slices deli ham
- 2 toothpicks
- ¼ cup all-purpose flour
- 1 egg, beaten
- 1 cup panko bread crumbs
- ⅓ cup grated Parmesan cheese
- cooking spray
Instructions
- Place a chicken breast on a flat work surface. Slice horizontally through the middle, being careful not to cut all the way through to the other side. Open the 2 sides and spread them out like an open book. Place chicken breast between 2 sheets of heavy plastic on a solid, level surface; lightly pound with the smooth side of a meat mallet to a 1/4-inch thickness. Repeat with remaining chicken breast.
- Season each chicken breast with salt and pepper. Spread Dijon mustard on top. Place 1 slice of cheese on each breast. Top each with 2 slices of ham and 1 slice of cheese. Roll each breast up and secure with a toothpick.
- Place flour in a shallow bowl. Place egg in a second bowl. Mix panko bread crumbs and grated Parmesan in a third bowl.
- Preheat an air fryer to 350 degrees F (175 degrees C).
- Meanwhile, dredge chicken breasts in flour; shake off excess. Dip into beaten egg, allowing any excess egg to drip back into the bowl. Press into bread crumb mixture to coat both sides; place breaded chicken breasts onto a plate and spray with nonstick spray. Let sit for 5 minutes while the air fryer preheats, then arrange breaded chicken in a single layer in the air fryer basket.
- Cook in the preheated air fryer for 10 minutes; flip chicken breasts and spray any dry spots with nonstick spray. Cook until chicken is no longer pink in the center, 8 minutes more. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

Pounded out to 1/4” but still had to cook 10 minutes instead of 8 and then 15 minutes instead of 10 after flipping! No big deal! It’s a delicious meal

I cook these in the air fryer a bit longer than the recipe calls for, but they are delicious. The only alteration I made is using gluten-free breadcrumbs, but made no difference in the flavor or consistency from using regular breadcrumbs.
My entire family loved this, even my 3 year old. I served it to both of my kids with pasta sauce, huge hit. I crushed ritz crackers and used that as the coating instead of panko crumbs. I also used Maui Onion Mustard from Eastern Provisions rather than plain Dijon. Can’t wait to make this again!

My spouse and guest, who I made this for said it was the best thing I have ever made. I used whole grain dijon mustard and added a simple sauce of heavy cream and butter with herbs de Provence. Here is one very important tip that will help keep things together. My son is a cook and showed me how to use plastic wrap to roll up the pieces. Once rolled up, hold both ends of the wrap and spin the rolled-up deliciousness to make it tighter. Next, put this in the freezer for 45 minutes. After taking it out, do the egg wash and breading then put it back in the freezer for 45 minutes. After this, take them out and put them in the air fryer.

Oh my goodness!! This was AMAZING!!! My kids even said it was the BEST thing I had ever made! I used GF flour and bread crumbs. Apparently my picture doesn’t meet the qualifications and there is no more for me to take a new picture! HA HA!

This was delicious. There were 6 of us for dinner and they all loved it! I served it with a Ceasar Salad (Yes, I used a family size bag mix because my grandchildren love throwing it all in a big bowl and shaking it until everything is all mixed up). I will definitely make it again.
