To free up oven space, the air fryer was used to prepare the ideal side dish for the holidays (or any time, really). To prevent the bacon from falling through the air fryer basket, be sure to slice it into large enough pieces.

Ingredients

  1. ½ cup white sugar
  2. ¼ cup applesauce
  3. ¼ cup molasses
  4. 3 tablespoons vegetable oil
  5. 1 egg
  6. 1 ½ cups all-purpose flour
  7. 1 teaspoon baking soda
  8. 1 teaspoon ground cinnamon
  9. ½ teaspoon salt
  10. ½ teaspoon ground cloves
  11. ½ teaspoon ground ginger
  12. ¼ teaspoon ground nutmeg
  13. ½ cup boiling water
  14. 1 teaspoon white sugar, or to taste

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Line a 12-cup muffin tin with paper liners.
  2. Combine 1/2 cup sugar, applesauce, molasses, vegetable oil, and egg in a medium bowl; beat with an electric mixer until combined.
  3. Stir together flour, baking soda, cinnamon, salt, cloves, ginger, and nutmeg in a separate bowl. Add flour mixture to applesauce mixture, stirring until combined. Add water; mix until well combined. Pour batter into the prepared muffin cups, filling each about 2/3 full. Sprinkle lightly with remaining sugar.
  4. Bake in the preheated oven until tops spring back when lightly pressed, 20 to 25 minutes.

These were good. I wish they had a bit more flavour but I can tweak the recipe if I want but they were still pretty good.

Simple yet tasty. I made these as written with the exception of the additional sugar topping, I totally forgot. These muffins remind me of a traditional gingerbread cake that my mom always made for Christmas. Definitely something that I will make again. Thanks for the recipe.
