Chicken should be sliced into strips and topped with your preferred salsa or dressing if it is being served over salad greens. Fish, meats, or vegetables can be seasoned with the leftover spice mixture.

Ingredients
- 2 ½ tablespoons paprika
- 2 tablespoons garlic powder
- 1 tablespoon salt
- 1 tablespoon onion powder
- 1 tablespoon dried thyme
- 1 tablespoon ground cayenne pepper
- 1 tablespoon ground black pepper
- 4 skinless, boneless chicken breast halves
Instructions
- Preheat the grill for medium-high heat. Lightly oil the grill grate.
- Mix together paprika, garlic powder, salt, onion powder, thyme, cayenne pepper, and ground black pepper in a bowl. Set aside 3 tablespoons spice mixture; store remainder in an airtight container for later use.
- Rub reserved 3 tablespoons spice mixture all over chicken breasts.
- Cook chicken on the preheated grill until juices run clear, 6 to 8 minutes on each side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

It was an ok recipe, too spicy, you can’t really appreciate the chicken flavor, if I do make it again I will be cutting the spices to half.

It was good but I agree with some the other comments, use less Thyme.
Great flavor! I used only about 3/4 tablespoon of cayenne and 1-3/4 tablespoons of paprika. Substituted fresh thyme for dry. Mixed with olive oil and marinated for 30 min then grilled. The spices formed a nice crust on parts of the chicken and it was still pretty spicy (light mouth burning).
Used chicken thighs instead of breast, well, because…chicken thighs! It was good but next time I’ll add a little of my own Cajun seasoning. Made this with scalloped potatoes & sweet & spicy green beans.
Delicious!!!! I followed the recipe for the rub, but used skinned chicken thighs because breasts are usually dry. I decreased the cayenne pepper to 1 teaspoon instead of Tablespoon. I used all the rub because I had eight thighs. I put it into a large plastic container and shook it until it was evenly coated, then I cooked it in my Ninja Foodie on Air crisp setting . It was crispy on the outside and so juicy on the inside! I served it over a nice salad with some Ranch dressing. The only change I will make next time is to decrease the salt to about half. My husband couldn’t stop eating it. This is a winner winner chicken dinner!!
This was very easy to make and was very tasty! There were NO leftovers, as my teenage sons gobbled it up. They ate it as is, but my husband and I ate the chicken on a salad. I will decide nake this again!
Super spicy but my fiance and I both like spicy food. I made the spice mix and then put 2 chicken breasts, 1.5 tablespoons of the mix, and 2 tablespoons of olive oil in a big Ziploc bag. I smushed everything around so that it was evenly coated and then tossed it in the fridge for a couple of hours. I cooked ours on the stovetop for a few minutes on medium high (each side) and then with the lid on at medium/medium low until done. They were great! I also pounded out the breasts a little while they were still in the bag. I can’t wait to toss a little of the spice mix (instead of just salt & pepper) into the normal lemon juice/olive oil marinade that I use for baked salmon.

This recipe was great, I added a little extra cayenne pepper to it, and lightly rubbed it in olive oil, grilled Caribbean style, the family loved it, made it 2 days in a row.
I was out of thyme (no pun intended! Ha!) so I substituted Italian seasoning. Delish!
This was a pretty good rub, I added a bit of my own “thoughts” into the mix, and it was a “WINNER! WINNER! CHICKEN DINNER”!!!! GRRRRREAT FLAVORS! Paired with a long grain and wild rice dish, tiny tomatoes, Japanese melon, and red onion/garlic marinated in my homemade Italian dressing, and some purple Japanese string beans in butter and heavy cream! it was terrific flavors mixing together! Great meal!

This was just fabulous. I ended up baking the chicken with some of the spice mixture on top only. My family didn’t find this too spicy but might have if I had coated the entire chicken with it. I would cut the cayenne by half if concerned about the heat. I didn’t find the thyme overpowering nor did anyone else. This spice mixture would be great on other meat. Definitely will make again.
Good and spicy! Easy to make ahead of time. We make a bag of the spices so we have it on hand ready for cooking. Who needs bread when you’ve got herbs and spices!
