Tonight for dinner, serve nachos! For a dinner to be served with tortilla chips, taco-seasoned ground beef is cooked with tomato and rice and topped with salsa, cheese, and lettuce.

Ingredients

  1. 1 pound ground beef
  2. 1 (1.12 ounce) package taco seasoning (such as Pace)
  3. 1 (10.5 ounce) can condensed tomato soup (such as Campbell’s)
  4. 1 ½ cups water
  5. 1 ½ cups uncooked instant white rice
  6. 1/2 cup thick and chunky salsa (such as Pace), or to taste
  7. 1/2 cup shredded Cheddar cheese, or to taste
  8. 1 cup shredded lettuce, or to taste
  9. cups t ortilla chips, or to taste

Instructions

  1. Cook beef and taco seasoning in a skillet until browned. Pour off fat.
  2. Add condensed soup, water, and rice. Heat to a boil. Cover and cook over low heat until rice is tender, about 5 min.
  3. Top with salsa, Cheddar, and lettuce. Serve with tortilla chips for dipping.

Quick and easy! I was going to make this for my grandson’s birthday party and then the menu got changed. Since I already had the ingredients, I made it for dinner the next night. We put the mix in Old El Paso stand up taco shells. I only used 1/2 package seasoning and still delicious topped off with the toppings!

This is similar to Taco Bell nacho supreme but the original had beans as you stated then meat, nacho cheese, tomatoes ( not salsa) and sour cream. It also did not have rice. I worked as a training manager for TB in the 90’s and somehow still remember all of the builds for a lot of their items. Actually my wife and I are having chili cheese burritos (or chilitos as they were known then) for supper tonight….YUMMERS.

I have made this recipe AS IS for several years now and have only just now changed it up. I love the original recipe like no other. but this time I added a can of tomatoes with green chilis and a can of corn. it just adds a little something extra. 🙂 I also love putting it in tortillas for burritos!

At first I thought it was a dip. But when I made it, it was even better than that. I layered the chips in a Jelly Roll pan put the beef and rice mix on top, sprinkled it with cheese, and put it in the oven on broil for a couple minutes. It turned out awesome.

Yes it was okay. Needed a few extra goodies. I used onion and bell pepper, garlic salt and chili powder. And instead of cheddar cheese I used Velveeta and a can of Rotel Plus it needed more water and a few minutes longer to cook. Worth a try again..

Living in a place where canned soup isn’t available, I substituted a box of tomato sauce. After reading reviews, and not having instant rice at home, I cooked regular rice in the rice cooker. I also added corn. I decreased the water to 3/4 cups since it wouldn’t be absorbed by the rice cooking. Good basic recipe to start with.

I think it was good but needed something more.. I think the next time i will tweek it a bit… Basimati Rice is the best rice ever so I will try that. other than that pretty good.

The entire family loved this recipe. I stretched the recipe to feed 6+ by using 1 package of spanish rice (1-1/2 cups dry) and adding 1/2 cup dry white rice and increasing the water to 2 cups. It came out perfect and I had a bunch leftover.
