Ingredients

  1. ¾ cup fresh blueberries
  2. 2 teaspoons white sugar
  3. 1 teaspoon all-purpose flour
  4. ½ teaspoon vanilla extract
  5. 3 tablespoons rolled oats
  6. 1 tablespoon brown sugar
  7. 1 tablespoon all-purpose flour
  8. 2 teaspoons butter, melted

Instructions

  1. Combine blueberries, white sugar, 1 teaspoon flour, and vanilla in a microwave-safe bowl; microwave for 30 seconds.
  2. Mix oats, brown sugar, 1 tablespoon flour, and melted butter together in another microwave-safe bowl; microwave for 30 seconds.
  3. Combine oat mixture with blueberry mixture.
  4. If you use frozen blueberries instead of fresh, microwave for 1 minute instead of just 30 seconds.

5.24.19 My blueberries were not soft after 30 seconds at high, so I gave them another 10 seconds (timing will always vary depending on the power of your microwave). I must say this certainly was simple and was a small dessert for two after lunch today. Needless to say, you won’t get the crispy crunchiness on the topping that you get with baking, but all in all, it tasted pretty good. Just a little on the dry side, so if I make again, I’d probably bump up the butter a bit in the oatmeal topping.
