Ingredients

- 2 pounds bulk spicy breakfast sausage
- 2 pounds frozen hash brown potatoes
- 2 cups shredded Cheddar cheese
- 1 (7 ounce) can green chile peppers (Optional)
- 8 large eggs
- 2 cups milk
- 1 teaspoon salt
- ½ teaspoon ground black pepper
- ½ teaspoon onion powder
- ½ teaspoon garlic powder
Instructions
- Preheat the oven to 350 degrees F (175 degrees C). Spray a 9×13-inch baking dish with cooking spray.
- Cook and stir sausage in a hot skillet over medium heat until crumbly and no longer pink, 5 to 7 minutes. Drain and discard grease, and transfer sausage to a bowl.
- Cook hash browns in the skillet in the residual grease over medium heat, stirring occasionally, until lightly browned, about 8 minutes. Remove from the heat.
- Transfer hash browns to the prepared baking dish and spread in an even layer across the bottom. Sprinkle cooked sausage over top, then layer with Cheddar cheese and chile peppers.
- Whisk milk, eggs, salt, pepper, onion powder, and garlic powder together in a bowl. Pour over hash brown mixture.
- Bake casserole, uncovered, in the preheated oven until bubbly and the top is golden brown, 35 to 40 minutes.
- Cover and refrigerate the casserole after Step 4 if baking later.

Pretty much a failure. Tasteless. Browning 2 lbs of frozen hash browns did nothing except make mashed potatoes. If I would do this recipe again, I would cut the amount of potatoes by at least half and then just thaw them and remove the water.
This breakfast casserole was a big hit with my coworkers. I replaced the 2 cups of milk with 1 cup of milk and 1/2 cup of half ‘ half, added 1/2 cup of chopped green onions, and I used 10 eggs. I also added a generous 2 cups of shredded cheddar. I think the consistency was a little creamier with less separation between the eggs and milk
Loved it! I did diced 1/2 cup onions and sauteed while browning the sausage. I omitted the garlic and onion powder, reduced the milk to 1 1/2 cups and increased eggs to 10 .. loved it!
I added 4 more eggs & another1/2 cup of milk.

I love this recipe, I have made it 4 time and getting ready to make again. I do not add the green chilie peppers but everything else I follow to the tee. This is my go to for Breakfast Casserole.
I make this often. I use mini tater tots. Bake them first on a cookie sheet. Line the 9x 13 with them. Make sure they are crispy. Cook the spicy Jimmy Dean and drain on paper towels. I use 9 eggs. After beating the eggs, add milk and whatever you want to add. Bake for 45-50 minutes. So great to cut to single servings and freeze. Easy to microwave, add an English muffin. Great weekend breakfast.

I actually added in an extra cup of cheese and substituted turkey sausage for regular, so I could pretend to be somewhat healthy. Doing this again, I think I will actually chop the sausages smaller. The store only had premade hashbrowns, but if you can get the frozen uncooked ones, I recommend those since they would be more crispy and add more of a potato flavor to the bottom of this layered casserole. I really enjoyed this one. It makes enough for a good week of hearty meals too!
An easy and tasty breakfast. I made 1/2 of the recipe and used green chilies from the local farm.
Super easy to whip up! I halved the recipe and used turkey sausage. I ended up having to finish it in the microwave because it wouldn’t set up, but it was still delicious! Great for an easy weekend brunch.
This was delicious! The only thing we would change is to add actual sautéed diced onion instead of using the onion powder.

Delicious!! I used ground turkey sausage with chorizo flavorings, I also added turkey bacon, some pre-diced ham and mushrooms sauteed in minced garlic. mmmm. My husband likes tomatoes, so I put some on his side. I didn’t use enough hash browns (didn’t do the whole bag), as I didn’t taste them enough, so if I make this again, I will use more hash browns. Do NOT add the salt. Way to salty. If any, maybe a pinch. There is plenty with the garlic and onion alone, powder or salt. This recipe is perfect without it.
