Great Mustard Relish

My mum used to make this gingerbread cookie icing every Christmas.

Yield: 1 cup

Ingredients

  1. ½ cup dill pickle slices
  2. ½ cup chopped onion
  3. 1 tablespoon prepared yellow mustard

Instructions

  1. Pulse pickles and onions separately in a food processor into 1/4-inch pieces, cleaning the processor bowl in between. Transfer to a bowl.
  2. Add mustard and stir until relish is well blended.

I used my homemade horseradish hot pickles, red onions, yellow mustard. Minced by hand and mixed with a pinch of sugar. Turned out great, tangy, hot, and a little sweet! (didn’t want to make a huge portion or clean processor!)
