Ingredients
- 1 pound bulk breakfast sausage
- ¼ cup all-purpose flour
- 2 ¼ cups milk
- 1 teaspoon kosher salt, divided
- ½ teaspoon ground black pepper, divided
- 1 tablespoon butter, softened
- 6 large eggs
- 1 (16.3 ounce) can refrigerated biscuit dough
- 3 cups shredded Cheddar cheese
Instructions
- Preheat the oven to 350 degrees F (175 degrees C). Butter the bottom and sides of a 9×13-inch baking dish.
- Heat a large skillet over medium-high heat. Add sausage and cook, crumbling with the back of a spoon, until browned, 5 to 7 minutes.
- Reduce heat to medium and sprinkle flour evenly over sausage. Cook, stirring constantly, for 1 minute. Add milk and stir, scraping any browned bits from the bottom of the pan. Cook, stirring often, about 7 minutes. Season with 1/2 teaspoon salt and 1/4 teaspoon pepper. Remove from heat.
- Crack eggs into the prepared baking dish and whisk in remaining salt and pepper until well blended. Cut each biscuit in quarters and arrange in a single layer over eggs. Sprinkle 1 1/2 cups Cheddar cheese over the biscuits. Pour sausage gravy over the cheese and spread evenly. Top with remaining cheese.
- Bake in the preheated oven until golden and bubbly, 25 to 30 minutes. Let stand for 5 minutes before serving.

DELICIOUS AND EASY TO MAKE
I had to make extra gravy but other than that this was AMAZING!!! My husband and son have asked for it multiple times but I am not a huge fan of breakfast for dinner. We also use frozen biscuits because they don’t have the same dangerous ingredients as refrigerated because of the packaging. We just thaw them enough to cut and extra gravy and everything else is the same—SO GOOD—sometimes we also add hash browns to the casserole. We brown the hash browns on the stove and then add them to the bottom of the casserole dish—ALL The best flavors of breakfast!!
Great recipe! Comfort food for my families, “breakfast for supper” Wednesdays. Also wonderful for church brunch! Heats up well for leftovers, if there is any.
Made this for dinner. It was pretty good. I did not add any salt and I am glad I didn’t. It was fine without it. I also used spicy sausage. I am glad I did, it needed the slight kick. The only issue is that it seemed a bit dry to me. The biscuit’s soaked up all of the moisture of the gravy. I am not sure how I would change this. But, for an occasional meal it is tasty.
Fabulous recipe. Added onions and garlic to saute with ground turkey and some poultry spice. This one’s a “keeper”

Deserves a 4 1/2 but it isn’t possible. Made this just like the recipe that was posted. Flavors were great. My family all enjoyed it. The recipe didn’t specify what kind of bulk sausage to use so I simply used my favorite. The recipe calls for what would be “grands” sized biscuits but again didn’t specify which brand to use so I again just used my favorite. The only thing, and this is just my personal opinion, is that for some reason the biscuit dough being baked while sitting in the egg did not appeal to me for some reason. The odd thing about that is I do love to make sausage gravy with biscuits, potatoes, and egg breakfast bowls and have no issue there. Again, just a personal preference…. I have seen other posts knocking the recipe and giving it a middle of the road rating even though they haven’t even prepared the recipe. I have also seen other posts knocking it because they altered the recipe and didn’t choose their favorite sausage. Reviews like that are not helpful in anyway and should be taken for what they are.
Taste is good except too salty. Also, actually TOO MUCH CHEESE! This is 1/2 cup of cheese per egg. Very greasy and fat is way high. I love cheese, but suggest using half as much. Fat 54g, Sodium 1600g? Crazy.
This is one of my families favorites, super tasty and easy. I add a small can of green chilies to the gravy for a little extra kick. I use the mixed Mexican blend cheese also.

This one won’t get my recommendation, but it was not the worst thing I’ve ever had. First of all, I made a batch of my own scratch biscuit dough because I don’t like the taste of canned dough. I used a bulk breakfast sausage that could have used more seasoning. I would recommend using a spicy sausage since this dish needs more oomph anyway. The gravy bit is pretty standard, just the way I make my own sausage gravy which pairs nicely with my homemade biscuits. I suppose if I had guests, this would work better, but it’s not a keeper for me.
This turned out great and was my first ever breakfast casserole! Tastes just like good ole’ biscuits and gravy with eggs and cheese. Easy and a crowd pleaser.
I assembled it the night before and refrigerated it. Even after it being on the counter 45 minutes it still needed to bake for 45. It was a huge hit with my Bible study group.
Makes A LOT and is very good. I made for easy warm up breakfast for my husband so I undercooked it slightly so it would warm up nicely. He loved it and so did I. This recipe goes a long way and is very filling
