Matcha Pancakes

These pancakes with matcha are delicious. We strongly believe in sleeping late and enjoying brunch on the weekends (after all, we didn’t work hard all week! ), so it’s only fitting that we treat ourselves to one of our favorite brunch fare: the traditional pancake. Stacks of fluffy, buttery breakfast pastries somehow give us the impression that we are having dessert first thing in the morning, especially if there are chocolate chips present. Enjoy your brunch! Enjoy after adding extra white chocolate chips, butter, honey, and honey on top.

Ingredients

  1. 1 cup all-purpose flour
  2. 1 tablespoon green tea powder (matcha)
  3. 2 teaspoons baking powder
  4. ¼ teaspoon salt
  5. 1 cup cashew milk
  6. 1 tablespoon cashew milk
  7. 1 large egg
  8. 2 tablespoons olive oil
  9. 2 teaspoons vanilla extract
  10. ¼ cup white chocolate chips

Instructions

  1. Whisk together flour, matcha, baking powder, and salt in a large bowl. Make a well in the center of mixture; add 1 cup plus 1 tablespoon cashew milk, egg, olive oil, and vanilla to the well. Whisk batter briefly until just a few small clumps of flour remain. Add chocolate chips; stir again briefly.
  2. Grease a small saucepan lightly; heat over medium-low heat. Transfer 2 to 3 spoonfuls batter onto the center of the pan, spreading batter with the back of the spoon. Cook until small bubbles rise to the surface and burst, about 1 minute. Flip and cook until the edges are lightly golden brown, about 1 minute more. Repeat with remaining batter.

These are fantastic! We used sweetened soy milk instead of cashew milk, canola oil instead of olive oil, and left out the white chocolate chips. These were easy to make, and we would definitely make these again!
