Ingredients

  1. 4 medium yellow squash
  2. ½ cup extra virgin olive oil
  3. 2 cloves garlic, crushed
  4. salt and pepper to taste

Instructions

  1. Preheat an outdoor grill for medium heat and lightly oil the grate.
  2. Cut squash horizontally into 1/4-inch to 1/2-inch thick slices so that you have nice long strips that won’t fall through the grill.
  3. Heat olive oil in a small pan, and add garlic cloves. Cook over medium heat until the garlic starts to sizzle and become fragrant. Brush the slices of squash with the garlic oil and season with salt and pepper.
  4. Grill squash slices for 5 to 10 minutes per side, until they reach the desired tenderness. Brush with additional garlic oil, and turn occasionally to prevent sticking or burning.

I love summer squash, but, this cooking method didn’t work great for us. The squash quickly became overcooked in the middle. I will try it again, but, cut the slices on the thicker side next time.

I thought this was delicious. I grilled each strip directly on the grates of a gas grill on medium for about 5 minutes on a side (1/4 inch thickness) and served the squash with grilled salmon. Next time I will cut the squash a little bit thicker. I went with 1/4 inch and the strips were falling apart. They tasted great, but I’ll go with 1/2 inch next time.

Took it to our garden bbq and was a big hit. We went through four med size yellow squash and one large one from my garden, in nothing flat. I doubled rec. and used 4 large garlic cloves fresh from my garden. I added some Sweet Roasted Red Pepper vinaigrette to it. . . . First time I’ve ever had Yellow Squash and first time ever having it bbq’d, Oh wow, you got try it, and eat while it’s hot. . . . .Note, smaller squash is better than large ones. Less seeds and smaller too.
