Lemonade and strawberries seem to scream “summer,” don’t they? These tastes combined in a cake create a tart, sweet treat or snack. Lemon slices and more fresh strawberries can be used as garnish.

Ingredients

  1. 1 cup creamy salad dressing (such as Miracle Whip)
  2. 2 tablespoons white sugar
  3. 5 (15 ounce) cans baby peas, drained
  4. ½ cup finely chopped green bell pepper (Optional)
  5. 1 head iceberg lettuce, torn into bite-sized pieces
  6. 2 cups shredded Cheddar cheese
  7. bacon bits

Instructions

  1. Stir together salad dressing and sugar in a large salad bowl or 9×13-inch glass baking dish until sugar is dissolved. Add peas and chopped green pepper and mix lightly to combine. Spread pea mixture evenly across the bottom of the dish.
  2. Spread lettuce in an even layer over pea mixture and top lettuce with a layer of cheese. Sprinkle bacon bits over cheese.
  3. Chill for at least 8 hours or overnight to blend flavors.

This salad has so many varieties – try it Mexican with drained and rinsed pinto, black and red beans, corn, along with whatever else you want in way of spices. And to those who complained about the look of lettuce – it doesn’t take long to make the edge of the bowl look nice. You can also add red cabbage, multiple colors of peppers, hard boiled eggs. Be creative. It’s a great way to use up vegetables.

Omitted the sugar (didn’t miss it). Everything else was according to the recipe. Next time will try the frozen peas route. Will also add cherry tomatoes, black and green (stuffed olives w/various stuffing) diced onions, and real bacon cut up in bits Will also do a mix of greens (watercress, iceberg, romaine, cabbage, spinach, celery leaf) Think a good vinaigrette will work here as well. I make this same salad with Dukes mayonnaise and chopped smoked almonds. No bacon. I also use frozen peas that I’ve allowed to thaw under running water. Using miracle whip plus sugar makes this too sweet for my family.

Plan to make this for Christmas. Swapping out the green peppers for red peppers for a festive touch. And chopped romaine instead of iceberg. Made a small version as a test. Yummy.

I made this with frozen peas. They are so much better. Also, I reduced the peas so that it was a solid layer of peas. 75 ounces of peas was too much in my opinion. I layered it with lettuce, green peppers, peas, Miracle Whip, cheese and then bacon on top. I thought it was as good as I’ve eaten before.

I made it with frozen baby peas, omitted bell pepper, and used real bacon, cooked crisp and crumbled. I did not include bell pepper because not all in the group like it. I definitely would make it again because it went together very easily and everyone liked it!

I liked this. I only had fresh English peas I bought from Trader Joes which came in a 14oz bag. As a result, I made 1/4 of the recipe and layered the salad in 4 small glass dishes creating mini arranged salads. I cooked the peas in the microwave for 10 minutes in some salted water. I used regular mayo and sugar in the raw. I like something crunchy in my salad. I didn’t have any croutons, but added some corn chips. This really did work well. ty

This was delicious and a hit at our family Christmas gathering. I used the canned peas and found it worked well. I think the canned allows for better blending of flavors. Recipes you can make ahead are great for me! Loved it!!

Love the ease of making this the night before. I’m with some of the other reviewers, frozen peas work better. Also, I added tomatoes and green onions, this recipe is awesome because of all the veggies you can add to it. Thanks!

I tried this recipe with the “canned peas.” Not nearly as good as when made with frozen peas. The lettuce layers are not pretty either. Eye appeal is very important to me. I’ll not make this again.

This is similar to my mother-in-law’s Seven Layer Salad. The lettuce would be on the bottom, followed by a layer of celery, green onions (or bell pepper) followed by a layer of frozen peas (much tastier than canned peas), layer of your favorite dressing (mayo, miracle whip or you could do ranch or caesar), shredded cheddar and bacon bits..seven layers. When you use the frozen peas, it helps keep everything below the peas stay fresher longer and it can be made ahead by even a day with no problem. It was/is always one of my favorite salads.

Awesome idea, got me to thinking of other directions I can go with salads, serve in a larger mason jar instead of bowls, would be fun mixing and eating the salad that you like. Great idea!

This was a very easy and quick salad to make I changed it up a little added diced onions and minced garlic to give it a little kick swaped out the miracle whip for ceasar dressing and opted for fresh spinache and romaine lettuce instead of iceberg I used freshly cooked bacon it was wonderfu;
