Instant Pot Pasta with Italian Sausage

It’s simple to put everything together and cook in the Instant Pot.

Ingredients

  1. 1 ½ tablespoons olive oil
  2. 1 cup sliced onion
  3. 1 cup sliced bell peppers, any color
  4. 1 (12 ounce) package Italian-style chicken sausage links, or more to taste, casings removed
  5. 2 cloves garlic, minced
  6. 1 (26 ounce) jar marinara sauce
  7. 3 cups water
  8. 3 cups chopped fresh spinach, or more to taste
  9. 10 ounces penne pasta
  10. 1 tablespoon chopped fresh basil
  11. 1 tablespoon Italian seasoning
  12. 1 cup shredded Italian cheese blend

Instructions

  1. Turn on a multi-functional pressure cooker (such as Instant Pot) and select Saute function. Add oil and allow to heat. Add onion and peppers to hot oil; cook until they begin to get tender, 3 to 4 minutes. Add sausages and cook, breaking them up with a wooden spoon, until lightly browned, 4 to 5 minutes. Add garlic and saute for 1 to 2 minutes. Add marinara sauce, water, spinach, pasta, basil, and Italian seasoning; mix to combine. Cancel Saute function.
  2. Close and lock the lid. Select high pressure according to manufacturer’s instructions; set timer for 5 minutes. Allow 10 to 15 minutes for pressure to build.
  3. Release pressure using the natural-release method according to manufacturer’s instructions, 5 minutes. Then release pressure carefully using the quick-release method according to manufacturer’s instructions, about 5 minutes. Unlock and remove the lid. Stir in 1/2 cup shredded Italian cheese until combined. Serve with remaining cheese sprinkled on top.

I think I can make this recipe much much better next time if I just make the pasta separately. I seem to have this problem every time I make pasta in the instant pot- the penne gets way over cooked and mushy. I think the rest of the recipe was pretty delicious but I would recommend just making this on the stove, so you can keep an eye on the penne.

I made this with a few alterations. I had sweet and hot Italian Sausage, not chicken sausage, and used about 1/2 lb. of each. Had frozen spinach, not fresh. I didn’t have any basil. Everyone with the exception of my 8 y.o. granddaughter loved it. And she doesn’t like anything. Very easy and delicious and will definitely make this often.

This dish has become a regular for us. It’s very quick and easy. I use any type of pre-packaged chicken sausage links that are available and cut them into bite-sized pieces (no need to remove the casings). I’ve even made this recipe for company and it’s always a hit.

AMAZING! My husband says it’s his new favorite meal. I made this recipe without the basil, used a whole onion and whole red bell pepper, 16 oz great value Italian sausage, and I ripped my spinach in half instead of chopped. I wouldn’t mind having more spinach personally but it was enough. Also it was my first time using my instapot!

Made as written and this was great except for it was too heavy on the herbs. Most recipes I make are the opposite and they need more but this was potent to the point it was overbearing. This was super simple and I will make again but I will decrease the Italian seasoning to a teaspoon or either just leave out the basil altogether. With that being said, this is a great recipe! Italian sausage is full of herbs and seasonings so let it do the work for you!
