If preferred, this zucchini cake recipe can be made in two loaf pans. My son adores it since it freezes well and stays incredibly wet. Although it’s delicious plain, I generally top it with cream cheese icing.

I made no changes. Didn’t need any! This is the type of icing I was looking for – it hardens just enough to stack. I halved the recipe and it was a perfect amount for 10 big sugar cookies. Thanks for the recipe!!
I really enjoyed this recipe! It’s a little on the sweet side, but other than that it was GREAT!
GREAT for sugar cookies
You need one more cup of flour and 1/2 cup more butter for the cookies. For the cookie frosting 5 tablespoons of milk is too much I had to add more shortening and a cup of flour to get my icing to thicken.
I made soft gingerbread cookies, and I wanted a frosting that would be easy to decorate with, easy to make, and easy to eat. Score! I might try butter flavor shortening for different type of richer cookies. But this was so much better than “Royal icing”!!!!I love this soft but not too soft icing. Thanks!
I made Christmas tree cookies for my class and needed to decorate them, this recipe was perfect! I can’t wait to see what they think tomorrow
loved the way these cookies turned out and with the frosting they were a hit at last year’s thanksgiving and just made some for this year turned out even better this time around.
Goes great with the Sugar Cookies IX recipe!
Awesome! Don’t change a thing!
Made the recipe as provided for several batches of Christmas cookies made on different days and it is awesome! My family and friends have raved over the cookies and icing. This one is a keeper.
My kids and I made this recipe as a homeschool lesson. We used it on top of the Soft Sugar Cookie IV recipe. They both turned amazing. Our friends and family really liked the frosting. We will use this recipe again! Thanks
have not tried yet, but very good reviews. Making frosting today.
delicious!
My daughter wanted something sweet. We went in to the pantry closet and found a mix of snickerdoodle. We put aside the topping that came with it and made this recipe instead. We didn’t alter anything. She had fun making this and they were trophy cookies and I’m not one for frosting and I really enjoyed the cookies and didn’t scrape off the frosting as I always do. Saved this one to my collection.
I loved it and didn’t have to make any changes to it. 🙂
This recipe was perfect I love it soooooo much it was awesome
Very easy!
I have used this recipe in the past and the shortening is just to blah – so I use 1/4 cup and 1/4 cup real butter, tastes much better
delicious frosting. used it with the best rolled sugar cookie recipe on this site.
i loved it
Perfect & easy!!! Thank you!!!
