This traditional Mexican breakfast favorite will liven things up a bit instead of the same old boring eggs and bacon!

Ingredients

  1. 5 large eggs
  2. 6 (6 inch) corn tortillas, cut into bite-sized strips
  3. 1 large tomato, diced
  4. 1 medium onion, chopped
  5. 3 medium fresh jalapeno peppers, chopped
  6. 1 cup shredded Cheddar cheese, divided
  7. 1 tablespoon garlic, minced
  8. nonstick cooking spray (such as Pam®)
  9. salt and ground black pepper to taste

Instructions

  1. Beat eggs in a bowl until frothy. Add tortilla strips and let soak a few minutes.
  2. Add tomato, onion, jalapeno peppers, and a bit of Cheddar cheese to the egg mixture.
  3. Spray a skillet with nonstick spray and heat over medium-high heat. Add garlic; cook and stir to brown lightly, about 1 minute. Pour in egg mixture; cook and stir until eggs are set, about 5 minutes. Season with salt and pepper.
  4. Reduce heat to low and sprinkle remaining Cheddar over top. Cover and cook until cheese is melted, 2 to 3 more minutes.

This recipe is ok. I liked the novelty of using corn tortillas. However, I think maybe adding some hot breakfast sausage might add a lot to this recipe. I only added 4 corn tortillas which was plenty for this recipe. Next time I will sauté the onions and jalapeños because the onions and peppers were still crunchy.

This was really good. The onion and jalapeno were crunchy-almost raw. Next time, I’ll sauté them first. This is a perfect amount for three people.

I love migas and I love them even more with the addition of Mexican chorizo, which I added. I did not measure anything just added it all in and they were perfect. This is a good basic recipe and one that I will constantly make. Thanks for the recipe.
