Best Snowball Cookies

When I had pancakes for dinner and needed a fruit to complement the pancakes and sausage, I came up with this dish. I just had pineapple, thus this happened. I had everything I needed in my cabinet to prepare this.

Ingredients

  1. 1 cup unsalted butter, softened
  2. ½ cup powdered sugar
  3. 1 teaspoon vanilla extract
  4. 2 ¼ cups all-purpose flour
  5. 1 cup very finely chopped pecans
  6. ¼ teaspoon salt
  7. ⅓ cup powdered sugar, or more as needed

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C).
  2. Beat butter, 1/2 cup powdered sugar, and vanilla with an electric mixer in a large bowl until smooth. Gradually mix in flour, pecans, and salt until completely incorporated. Roll dough into walnut-sized balls and place 2 inches apart onto ungreased baking sheets.
  3. Bake in the preheated oven until bottoms are light golden brown but tops are still pale, 12 to 15 minutes. (Try not to let cookies get too brown: it’s better to undercook them than to overcook them.)
  4. Remove cookies from the oven and let sit on the baking sheets briefly before removing to wire racks.
  5. Place 1/3 cup powdered sugar in a shallow bowl; roll hot cookies in sugar to coat, then return to the wire racks to cool. Once cooled, roll cookies in the powdered sugar once more.

Delicious. They key is to make small balls. Time consuming to roll smaller ones but do it and you’ll have delicious, not dry snowballs!!

Flavor is good. Lots of pecan flavor which is what I expected. 12 minutes was definitely long enough bake time. I made them walnut sized and they are too big. Too big for rolling in the powdered sugar without the cookies wanting to fall apart. So I went ahead and sifted the powdered sugar on them for both coatings. And, making them walnut sized in no way could have made 60 cookies. I got barely 3 dozen. Maybe we have big walnuts where we are. LOL

I made these for the first time today. They are very good. So easy to make in a short time. It only yielded 30 cookies so I made another batch. Non-dairy is necessary for me so I had to use margarine. I thought they turned out great and my husband agreed. This cookie has several names but whatever you call it, it’s delicious. This is my daughter’s favorite cookie and never lasts long in this house. It has a delicate, buttery flavor and will be the perfect addition to your Christmas cookie platter. I roll the cookies in the confectioner’s sugar once, and then I place the confectioner’s sugar in a sieve and sprinkle over the cookies for an even and complete coating.
