Ingredients
- 3 tablespoons extra-virgin olive oil
- 2 teaspoons white balsamic vinegar
- ½ teaspoon kosher salt
- 2 cups arugula
- 2 cups baby spinach leaves
- 1 cup thinly sliced red onion
- 1 cup grape tomatoes, halved
- ½ cup crumbled feta cheese
- 2 cups bite sized watermelon chunks
Instructions
- Whisk the olive oil, white balsamic vinegar, and salt together in a small bowl; set aside.
- Combine the arugula, spinach, onions, and tomatoes in a large salad bowl. Drizzle the vinaigrette over the salad mixture; toss to coat. Add the feta cheese and watermelon to serve.

This did the trick for watermelon feta salad. There are a lot to choose from. Did not have arugula so I just used Romain. Added a little fresh mint. Rinsed the onions, but not sure if that was necessary. I just didn’t want over powering onion flavor.

Lots of summer flavor. Don’t mix together until you are ready to eat. It doesn’t last long, so don’t make extras. (It gets very watery.)

Really good. I did not have white balsamic vinegar so I used white wine vinegar and a pinch of sugar as a substitute. I would make this again.
I used only half the onion and that was plenty. Husband and daughter loved it. Dressing is just the right amount, not too much like in many salad recipes.
This was a good lunch campaign. I used Italian Salad Dressing, and I added some pineapple chunks and Honey Roasted Almonds with Cranberries.

Delicious & easy to make, especially if you prep in advance. I tossed in 2 ears of roasted corn cut off the cob & put some cut red onion to the side for those in my household who prefer it.

Perfect sweet and savory salad. The arugala provides the perfect hint of pepper. I only had the red basalmic but doubt it made a huge difference. I also added toasted pecans that added another level of crunch. Delish!
