Ingredients

  1. 1 ½ pounds ground beef
  2. 1 cup crushed pork rinds
  3. ½ cup grated Parmesan cheese
  4. ⅓ cup tomato sauce
  5. ¼ cup chopped onion
  6. 1 large egg
  7. 2 tablespoons chopped fresh parsley
  8. ½ teaspoon salt
  9. ½ teaspoon ground black pepper
  10. ½ teaspoon garlic powder

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 9×5-inch loaf pan.
  2. Mix beef, pork rinds, Parmesan, tomato sauce, onion, egg, parsley, salt, pepper, and garlic powder together in a bowl until well combined. Press mixture into the prepared pan.
  3. Bake in the preheated oven until browned and no longer pink in the center, about 1 hour. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).
  4. You can use half ground beef and half ground pork for this if preferred.

It was incredible instead of parsley I used fresh chives since it’s a substitute and it was awesome. Paired it with cauliflower mashed potatoes and green beans and it will be a dinner my family will want over and over again. Also as soon as meatloaf came out I drained all the grease.

This recipe was awful. The meatloaf turned out super greasy and had to be served with a serving spoon because it wouldn’t hold together – this after I allowed it to sit and cool for a while so that the so-called juices could be absorbed, which did not happen. The pork rinds and parmesan cheese made it super salty. I would not recommend this recipe.

It was a super easy recipe to follow for my son who is 7. We did make a few modifications: doubled the pork rinds, substituted Fiesta blend shredded cheese for parmesan, doubled the eggs, used dried minced onion instead of fresh, 1/4 c tomato sauce instead of 1/3, we used mesquite steak seasoning instead of just garlic powder, and we used a 9in pie pan instead of a loaf pan ( it cooked to temperature in 45 minutes).

This was soooooo good!! I used pork rinds that were chili and salt flavored. The only thing I changed was by adding a few dishes worcestershire and 1 clove garlic crushed. I have made many a meatloaf and always the same recipe which was loved until now. This is most definitely my new meatloaf recipe. So moist and delicious

This recipe was bland in my opinion. If I were to make this again, which I doubt, I would double the spices and the Parmesan cheese. I would also sauté the onions before adding to the meatloaf. My husband and I thought it mostly tasted like hamburger with onions in it.

I made 2 loafs of this. One with parmesan cheese, one with shredded cheese. I used 1 small can of tomato sauce for both. I also added 1 cup of unsweetened coconut milk and a half teaspoon of mustard powder. Man. This is good. The next batch I may add half a teaspoon of sage and tablespoon of Worstershire sauce. I say ‘may add’ because the current recipe is very good.

Used what I had on hand, one pound ground beef and 1/2 pound bulk breakfast sausage. I also used no added sugar Ketchup rather than tomato sauce. Easy and very tasty.

This is the most amazing Meat Loaf I have ever had.. I did not have the fresh Parsley and I added some dried red peppers to it and topped it with Cheese with 3 mins left to cook for a nice melt.. Most amazing flavors… just melts in your mouth.

I did substitute fire roasted tomatoes for the tomato sauce – dictated by necessity as I did not have sauce but had fire roasted tomatoes. It was a big hit!

I don’t have meatloaf often because I’m really picky about my meatloaf, and dislike most recipes since they call for ketchup or a sugary sauce/topping. This recipe, however, had none of that! Yay! I made it exactly as written, except in place of plain tomato sauce, I used Rao’s marinara sauce. The only change I’d suggest is to start checking the doneness at around 45 minutes, as that’s when mine was done. The Parmesan gives it a wonderful flavor and the house smelled amazing while it was cooking. Served with mashed cauliflower, it makes a perfect low-carb/keto meal.
