I started eating salad in smoothies because I have not been able to eat salad because of pregnancy food aversions. This delicious smoothie has at least three servings of vegetables.

Ingredients
- 3 cups chopped romaine lettuce
- ⅓ cup milk, or more as needed
- 4 frozen strawberries, or more to taste
- 1 frozen banana, cut into chunks
- ¼ teaspoon vanilla extract, or to taste (Optional)
Instructions
- Put romaine lettuce into the bottom of a blender pitcher; add enough milk to cover completely and blend on High until smooth.
- Drop one strawberry at a time into the blender while still running on High and allow the berry to blend completely before adding the next. Blend one banana chunk at a time into the mixture in the same manner as the strawberries. Thin the smoothie with additional milk to keep smoothie blending properly. Blend vanilla extract into the smoothie.
- If it needs more sweetener, you can start with a teaspoon honey, sugar, or agave, what ever you want to sweeten it.

I serve it at school for children to sample. To average the rating I got, I have to say it’s OK. !
I didn’t have strawberry’s so I used frozen blueberries and raspberry’s, added a tsp of fresh squeezed lemon, 1 TBS of powdered PB8 peanut powder and used unsweetened almond milk. It came out very good. You can always adjust the sweetness by adding Monk Fruit or some other natural sweetener to your liking or dietary needs.
I was a little skeptical of this one, because although I make tons of smoothies with greens added, I’ve never made one with Romaine lettuce. I made this exactly as written, including using the vanilla extract. It was sweet enough for my liking because the banana I used was very ripe. The overall flavor was good, however I think I prefer my smoothies with kale or spinach instead. This was a very nice change of pace though!
