Ingredients
- 4 (6 ounce) fillets halibut
- 1 lime, cut into wedges
- salt and pepper to taste
- 3 cloves garlic, coarsely chopped
- ½ cup chopped fresh cilantro
- 1 tablespoon fresh lime juice
- 2 tablespoons butter
- 1 tablespoon olive oil
Instructions
- Preheat a grill for high heat. Squeeze the juice from the lime wedges over fish fillets, then season them with salt and pepper.
- Grill fish fillets for about 5 minutes on each side, until browned and fish can be flaked with a fork. Remove to a warm serving plate.
- Heat the oil in a skillet over medium heat. Add the garlic; cook and stir just until fragrant, about 2 minutes. Stir in the butter, remaining lime juice and cilantro. Serve fish with the cilantro butter sauce.

Super refreshing summer-time recipe. Turned out great and will definitely make receipt again. Only change was I reduced cilantro, but butter sauce turned out very flavorful as is.
I don’t usually enjoy fish but tried this on Lake Superior whitefish and absolutely love it! Halibut was far more expensive for our area. Other than the fish substitute, I do exactly as noted. Thanks!

Delicious flavors! I felt the sauce needed more “wetness” so added quite a bit more butter, lime juice, and a bit more olive oil, too. The coarsely chopped garlic was a great touch. Definitely put the sauce together in the pan that the fish cooked in because that adds a lot of great flavor.

I had cod loin in the fridge, so that is what I used. Turned out great, my husband and mother said it was great! Makes a nice change from battered fish.
There are only two of us and I only had a small piece of halibut. So I salted and peppered the fish and sautéed it in the olive butter adding the garlic when turning. I squeezed the lime juice over at this time. Browned beautifully on both sides. My husband doesn’t normally eat seafood but declared this dish excellent.
Have made this a couple times, once with dried cilantro, the second with fresh – fresh makes a big difference! Will most likely not use all the lime juice next time, it was a little too much for my taste. Served with risotto rice, delicious.

This recipe is excellent. Now, for those saying that it is bland here are my recommendations: Adjust the salt and pepper when preparing the butter. Add a bit of minced onion along with the garlic and cook it as directed. When you add the cilantro, add the juice of one extra lemon. Mine was “bland” because I used unsalted butter. My basic change was to add extra of mainly the ingredients that make this recipe. This, made all the difference without altering the recipe drastically.
I made this pretty much as written. Grilled the halibut on my Big Green Egg at about 400 degrees and used apple wood to smoke it. Marinated in lime juice for a couple of hours prior to grilling. Cooked fish to about 135 degrees internal temperature. With the cilantro butter, it was fantastic.
Another great recipe for halibut. This is great for an inexperienced fish cook.
